Number Of Ingredients 15

4 extra large eggs
1 c sugar
1/2 c water
1/2 c amaretto
1/2 c canola oil
1/4 c butter, melted
2 c flour
3 tsp baking powder
1 tsp salt
3/4 c sliced almonds
GLAZE
1/2 c sugar
1/2 c water
1/4 c butter
1/4 c amaretto

Steps:

  • 1. Preheat oven to 325. Grease and flour loaf pans. I used a 5.2x9x2.75, you can use 4 of the 5 3/4x3x2 loaf pans, I didn't have this size.
  • 2. In a large bowl, beat eggs, sugar, water, amaretto, oil and melted butter until well blended. In another bowl, whisk flour, baking powder and salt; gradually beat into egg mixture, stir in almonds. Transfer to prepared pan. Bake for 1hr15min. for the larger loaf pan and if you use the small loaf pans 30 to 40 minutes.
  • 3. Make the glaze, combine sugar, water and butter in a small saucepan; bring to a boil and cook and stir 3 minutes. Remove from heat; stir in amaretto. Remove cake from oven let sit at least 5 minutes and pour glaze over the cake while still in the pan. Let stand until glaze is absorbed at least 30 minutes. You don't have to use all of the glaze, especially on the 1 large loaf. Remove cake from pan. This cake freezes well also.

½ cup water
½ cup vegetable oil

Absolutely Heavenly Amaretto Cake image

This recipe comes from the Diocese of Louisiana, from a cookbook entitled "A Cook's Tour of the Bayou Country". Generally, I haven't found anything from Louisiana that didn't taste good! This cake turns out really moist.

Time 1h40m

Yield 1 10 inch cake

Number Of Ingredients 15

1 cup butter, softened
2 1/2 cups sugar
6 large eggs
3 cups cake flour, sifted
1/4 teaspoon baking soda
1/2 teaspoon salt
1 (8 ounce) carton sour cream

3/4 cup Amaretto, divided
3/4 cup orange marmalade
1/4 cup plus 2 tbsp apricot preserves
1/2-1 cup almonds, chopped, blanched, and toasted

Steps:

  • Beat butter at the medium speed of an electric mixer about 2 minutes or until it is soft and creamy. Gradually add the sugar, beating at medium speed for 5 to 7 minutes. Add the eggs, one at a time, beating between each addition. Beat just until the yellow disappears.
  • Combine the flour, baking soda and salt; add to the butter mixture alternately with the sour cream, beginning and ending with the flour mixture. Mix at low speed just until blended after each addition. Stir in flavorings and 1/2 cup amaretto.

  • Combine the remaining 1/4 cup of amaretto, marmalade, and preserves in a small saucepan. Cook over medium heat until marmalade and preserves melt, stirring frequently. Drizzle over the cake; sprinkle with the almonds.

Tips:

- For the best texture, use almond flour that is finely ground. - If you don't have almond flour, you can make your own by grinding almonds in a food processor or blender until they are a fine powder. - For a richer flavor, use dark chocolate chips. - If you don't have dark chocolate chips, you can use semi-sweet chocolate chips. - If you don't have a loaf pan, you can also bake the cake in a 9x9 inch baking dish. - The cake is best served warm, but it can also be stored at room temperature for up to 3 days. - You can also freeze the cake for up to 2 months.
