CHICKEN & BANANA FOSTER WITH AMARETTO & MALIBU RUM

Chicken & Banana Foster With Amaretto & Malibu Rum image

Yes I mixed Chicken and Bananas with a banana foster recipe and it worked. My husband loved it. You can also add medium size shrimp already prepared to go in if you like. I serve on top of angelhair plain pasta slightly buttered or plain rice just slightly buttered. Enjoy

Time 50m

Number Of Ingredients 9

1 c butter softened slightly
6 Tbsp dark brown sugar
6 Tbsp light brown sugar
3 lb boneless/skinless chicken breasts cut into 1 inch cubes
salt and pepper to taste
1/2 c flour
4 bananas sliced
3 oz. amaretto liqueur
3/4 c malibu(coconut)rum

Steps:

  • 1. This recipe goes fast so have all ingrediants ready. Melt the butter in a large skillet over medium to low heat, stir in the sugars. Season the chicken with salt and pepper(I use very little)and toss with the flour to coat. Add chicken to skillet and cook low and slow until almost cooked through. Add the bananas and stir add the amaretto and rum and stir and heat through and cook very low 15 to 20 minutes. If chicken is done already only cook 10 minutes. At this point if you wish use a long match and light the liqueur and allow to burn until alcohol cooks off (about a minute) Serve.
  • 2. I serve over plain rice or plain angel hair pasta or just alone with a simple vegetable, bread and salad.

Time 12m

Yield 2 serving(s)

Number Of Ingredients 7

2 tablespoons unsalted butter
1/4 cup dark brown sugar
1/4 teaspoon ground allspice
1/2 teaspoon freshly ground nutmeg
1 tablespoon banana liqueur
2 under ripe bananas, sliced in half lengthwise
1/4 cup dark rum

Steps:

  • Melt butter in a 10-inch heavy skillet over low heat.
  • Add brown sugar, allspice and nutmeg and stir until sugar dissolves.
  • Add banana liqueur and bring sauce to simmer.
  • Add bananas and cook for 1 minute on each side, carefully spooning sauce over bananas as they are cooking.
  • Remove bananas from pan to a serving dish.
  • Bring sauce to a simmer and carefully add the rum.
  • If the sauce is very hot, the alcohol will flame on its own.
  • If not, using stick flame, carefully ignite and continue cooking until flame dies out, approximately 1 to 2 minutes.
  • If sauce is too thin, cook for 1 to 2 minutes until it is syrupy in consistency.
  • Immediately spoon the sauce over bananas and serve.
  • Serve with waffles, crepes, or ice cream.

Tips:

  • Use ripe bananas. This will ensure that they are sweet and caramelized.
  • Do not overcook the bananas. They should be cooked until they are just tender, but not mushy.
  • Use a heavy-bottomed skillet. This will help to prevent the bananas from burning.
  • Be careful when flaming the bananas. Do this in a well-ventilated area and keep the flame away from your face and hair.
  • Serve the bananas foster immediately. This is when they are at their best.

Conclusion:

Bananas foster is a classic dessert that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. The combination of sweet bananas, caramelized sugar, and creamy ice cream is simply irresistible. So next time you are looking for a special dessert, give bananas foster a try. You won't be disappointed.
