Time 15m

Yield 2 dozen, 12 serving(s)

Number Of Ingredients 5

2 cups pecans, very finely chopped
2 cups confectioners' sugar, sifted
2 cups chocolate wafers or 2 cups graham cracker crumbs
2/3 cup Amaretto
finely chopped pecans, to finish

Steps:

  • Crush pecans and wafers separately using a food processor to equal 2 cups of each.
  • Combine food processor with sugar.
  • Slowly pour in liqueur until mixture forms a ball. You might not need the whole amount.
  • If mixture gets too wet, put it in the refrigerator overnight without a cover.
  • Shape into small balls; roll in additional finely chopped pecans.
  • Store in tightly sealed container. In the refrigerator is best.

Tips:

  • Chill cookie dough before scooping: Chilling the cookie dough before scooping helps the dough hold its shape better and prevents the cookies from spreading too much in the oven.
  • Use a small cookie scoop: A small cookie scoop will help you make uniform-sized cookies that bake evenly.
  • Roll cookies in powdered sugar: Rolling the cookies in powdered sugar before baking gives them a sweet, crunchy coating.
  • Bake cookies until they are just set: Overbaking cookies will make them dry and crumbly. Bake them until they are just set around the edges and still slightly soft in the center.
  • Let cookies cool completely before dipping in chocolate: Let the cookies cool completely before dipping them in chocolate. This will help the chocolate set properly and prevent it from sliding off the cookies.
  • Use a double boiler to melt the chocolate: Melting the chocolate in a double boiler helps prevent it from burning or seizing.
  • Dip cookies in chocolate and then roll in sprinkles: If desired, roll the chocolate-dipped cookies in sprinkles immediately after dipping. This will help the sprinkles adhere to the chocolate.

Conclusion:

Amaretto balls are a delicious and festive treat that are perfect for any occasion. They are easy to make and can be customized to your own liking. With a few simple tips, you can make perfect amaretto balls that everyone will love.
