2 tablespoons finely minced garlic
Kosher salt
2 cups carrots, peeled and chopped into rounds (approximately 2 medium)
2 cups peeled and diced potatoes
2 cups fresh green beans, broken or cut into 3/4-inch pieces
2 quarts chicken or vegetable broth

Time 6h

Yield 6 to 8 servings

Number Of Ingredients 9

1 pound kielbasa, sliced 1/4-inch thick on bias
Vegetable oil, as needed
8 cloves garlic, minced
1 pound red kidney beans, soaked at least 4 hours and up to overnight
2 quarts chicken broth
1 pound red bliss potatoes, cut into 1/2-inch cubes
6 ounces fresh kale, approximately 4 handfuls
1/4 cup red wine vinegar
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the kielbasa into a 7-quart Dutch oven and set over medium-low heat. Cook until the kielbasa has browned well and rendered its fat, approximately 15 minutes. If you do not have at least 2 teaspoons of fat, add enough vegetable oil to make 2 teaspoons. Remove the kielbasa from the pan and set aside.
  • Add the garlic and cook for 1 to 2 minutes, stirring constantly to prevent the garlic from burning. Add the beans and the chicken broth and cook, covered, for 45 minutes. After 45 minutes, add the potatoes, cover and cook for 15 minutes, stirring occasionally.
  • Wash, rinse and trim the kale and tear into bite size pieces. Add the kale to the pot, cover and cook for an additional 10 minutes or just until it is tender, but not mushy.
  • Add the red wine vinegar and black pepper and stir to combine. Evenly distribute the kielbasa between 8 soup bowls. Laddle the soup into bowls and serve.

SQUASH SOUP

Squash Soup image

Provided by Alton Brown

Categories     appetizer

Time 50m

Yield 6 to 8 servings

Number Of Ingredients 9

3 to 3 1/2 pounds butternut squash, approximately 2, seeded and quartered
Unsalted butter, melted, for brushing
1 tablespoon kosher salt, plus 1 teaspoon
1 teaspoon freshly ground white pepper, plus 1/2 teaspoon
3 cups chicken or vegetable broth
1/4 cup honey
1 teaspoon minced fresh ginger
1/2 cup heavy cream
1/4 teaspoon freshly grated nutmeg

Steps:

  • Heat the oven to 400 degrees F.
  • Place the quartered squash onto a half sheet pan, brush the flesh of the squash with a little butter and season with 1 tablespoon of the salt and 1 teaspoon of the white pepper. Place in the oven and roast for 30 to 35 minutes or until the flesh is soft and tender.
  • Scoop the flesh from the skin into a 6-quart pot. Add the broth, honey and ginger. Place over medium heat and bring to a simmer, approximately 7 to 8 minutes. Using a stick blender, puree the mixture until smooth*. Stir in the heavy cream and return to a low simmer. Season with the remaining salt, pepper, and nutmeg.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 10

1 1/2 tablespoons olive oil
1 cup coarsely chopped onion
1 cup coarsely chopped parsnip (or turnip)
1 cup peeled cored and chopped apple (I usually use gala)
1 cup peeled chopped butternut squash
1 cup coarsely chopped carrot
1 cup peeled coarsely chopped sweet potato
4 1/2 cups vegetable stock
3 finely chopped garlic cloves (or to taste)
black pepper, to taste

Steps:

  • Heat oil in a large saucepan on med-high heat.
  • Sauté onion until translucent.
  • Add garlic, apple, parsnip, squash, carrot and sweet potato. Sauté for approximately 5 minutes.
  • Add vegetable stock and bring to a boil.
  • Reduce heat and simmer for approx 30 minutes, (or until vegetables are tender) Stirring occasionally.
  • Let cool slightly, puree and enjoy!

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients prepped and measured. This will help you stay organized and avoid scrambling during the cooking process.
  • Choose Fresh, Seasonal Vegetables: Using fresh, seasonal vegetables will give your soup the best flavor. Look for vegetables that are brightly colored and free of blemishes.
  • Don't Overcook the Vegetables: Overcooked vegetables will become mushy and lose their flavor. Cook them until they are just tender, but still have a bit of a bite to them.
  • Use a Variety of Vegetables: The more variety of vegetables you use, the more complex and flavorful your soup will be. Try to include a mix of root vegetables, leafy greens, and cruciferous vegetables.
  • Add Some Herbs and Spices: Herbs and spices can help to enhance the flavor of your soup. Some good options include thyme, rosemary, sage, garlic, and pepper.
  • Don't Be Afraid to Experiment: Feel free to experiment with different ingredients and flavors to create a soup that you love. There are endless possibilities when it comes to vegetable soup.

Alton Brown's winter vegetable soup is a delicious, hearty, and nutritious meal that is perfect for a cold winter day. The soup is packed with fresh, seasonal vegetables and is full of flavor.
