Time 2h10m

Yield 1 cheese ball

Number Of Ingredients 10

1 pkg. (3 oz.) PHILADELPHIA Cream Cheese, softened
8 oz. goat cheese
1 clove garlic, grated
1/2 tsp. pepper
1 tsp. fresh dill leaves
1 tsp. basil leaves
1/2 tsp. rosemary leaves
2 tsp. finely chopped chives
1/2 Tbsp. fresh dill, garnish
1/2 Tbsp. parsley, garnish

Steps:

  • In a large bowl using a hand held mixer or stand mixer, add the cream cheese and mix until smooth. Add the goat cheese and mix together with cream cheese until well blended.
  • Add the herbs, dill, basil, rosemary, and chives and mix together. Lay plastic wrap on top of the inside of a smaller bowl completely covering the inside of the bowl leaving the excess plastic wrap hanging off the bowl. Use a rubber spatula and scoop the cheese mixture into the bowl.
  • Once all the cheese has been added, take the ends of plastic wrap and cover the exposed cheese wrapping the entire mixture. Turn the wrapped cheese to the countertop and use your hands to form into a perfectly sized ball. Place inside the refrigerator for, at least, 2 hours.

Categories     Appetizers & Snacks

Time 30m

Number Of Ingredients 8

1 pkg (8 oz.) cream cheese
1 jar Kraft Old English Cheese Spread
1 jar Kraft Bacon Flavored Cheese Spread
1 Tablespoon white wine vinegar
Garlic salt to taste
Onion salt to Taste
Parsley flakes
Crackers of your choice

Steps:

  • Mix the cream cheese, Old English Spread, Bacon Spread, and vinegar in a bowl with a blender. Using a spoon will also work, but using your blender will cut the time in half, and the mixture will be nice and creamy. When everything is mixed, start to add the garlic and onion salt to taste. Start off small, and work your way up towards a flavor that you enjoy.
  • When you are finished, put the cheese mixture in a decorative smaller bowl, and coat the top with the parsley flakes.
  • Put in the refrigerator for at least a half hour to chill before serving. I almost always make this cheese ball the night before you will eat it. This allows all of the flavors in the cheese ball to mix, and bring out all of the flavor. Enjoy! This tastes great!

BITS AND PIECES PARTY CHEESE BALL

Bits and Pieces Party Cheese Ball image

The cheese ball is a stalwart of the Midwest cocktail party, where it can be fashioned from processed Cheddar cheese and port wine, or pineapple and cream cheese. This recipe relies on the leftover ends of good cheese or even just one kind of good-quality, sharp cheese like Gruyère. The idea of adding butter comes from Vivian Howard, the North Carolina chef who features a cheese ball with blue cheese, chopped dates and bacon in her cookbook "Deep Run Roots." She calls hers a party magnet, and indeed, for all of the shade thrown at cheese balls, they are often the first thing to be eaten. They can be served with chutney, jam or simply alongside the best-quality crackers you can find.

Time 15m

Yield 1 12-ounce cheese ball, about 8 to 10 servings

Number Of Ingredients 10

4 tablespoons good-quality salted butter
1 cup shredded sharp, flavorful cheese, in any combination that might include Gruyère, Cheddar or blue cheese
3 ounces fresh goat cheese
4 ounces cream cheese
1 heaping tablespoon finely chopped scallions
1/4 teaspoon cayenne
1/4 teaspoon fish sauce
1 tablespoon lemon juice
1/3 cup chopped, salted roasted pecans
1 heaping tablespoon chopped flat leaf parsley

Steps:

  • Allow the butter and cheeses to come to room temperature. They should sit out of the refrigerator for at least 30 minutes.
  • Put everything except the pecans and parsley in the bowl of a stand mixer fitted with the paddle attachment. Beat until smooth, scraping down the sides of the bowl once or twice. It should take about 4 minutes.
  • Plop the mixture onto a piece of waxed paper and gently form into a ball. Place in the refrigerator for at least 15 minutes or until firm enough to work with.
  • Mix the pecans and parsley together on a large plate or a cutting board, then roll the cheese ball in the mixture. Cover any surfaces with a sprinkling of the mixture and pat into the sides until you have an evenly coated ball.
  • Wrap well in plastic wrap and refrigerate. When ready to serve, let the ball sit out for at least a half hour to soften. Serve with good plain crackers or small toasts.
