ROASTED CARROTS WITH ALMONDS AND OLIVES

Roasted Carrots with Almonds and Olives image

When you start with fresh baby carrots from the farmer's market, they need little more than a quick toss in salt, pepper, and olive oil to bring out their natural sweetness when they're roasted in the oven. This Spanish-inspired version gets salt and crunch from fat Cerignola olives and Marcona almonds. It pairs equally well with fish, turkey, or lamb and complements chardonnay, pinot grigio, merlot, and cabernet alike, making this dish your all-season starter or side.

Tips:

  • Choose the right carrots: Look for carrots that are firm and have a deep orange color. Avoid carrots that are limp or have blemishes.
  • Peel and cut the carrots evenly: This will help them cook evenly. For baby carrots, simply trim the ends. For larger carrots, cut them into 2-inch pieces or rounds.
  • Don't overcrowd the pan: If you're cooking the carrots in a skillet, make sure there is enough space between them so that they can brown evenly. Otherwise, they will steam instead of fry.
  • Cook the carrots over medium-high heat: This will help them caramelize and get a nice golden brown color.
  • Season the carrots with salt and pepper: This is a simple way to enhance their flavor.
  • Add other ingredients for extra flavor: Some popular additions to Aloha carrots include butter, honey, ginger, garlic, and sesame seeds.

Conclusion:

Aloha carrots are a delicious and versatile side dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great way to get your daily dose of vegetables. With just a few simple ingredients and a little bit of time, you can easily make this dish at home. So next time you're looking for a healthy and flavorful side dish, give Aloha carrots a try!
