ALMOND-CRUSTED HALIBUT CRYSTAL SYMPHONY

When you're done this halibut dish melts in your mouth! The credit goes to my future mother-in-law! If you can find creme fraiche you may substitute it for the heavy cream. Each filet should be between 3/4 and 1 inch thick.

Time 45m

Yield 6

Number Of Ingredients 17

⅓ cup dry white wine
2 tablespoons cider vinegar
2 tablespoons minced shallots
1 sprig fresh thyme
1 bay leaf
⅓ cup heavy cream
10 tablespoons unsalted butter - chilled, cut into tablespoon-size pieces
3 tablespoons chopped fresh chives
2 teaspoons fresh lemon juice
salt and pepper to taste
6 (6 ounce) fillets halibut
2 tablespoons vegetable oil
1 tablespoon unsalted butter
¼ cup fresh bread crumbs
⅔ cup minced blanched almonds
1 tablespoon unsalted butter, melted
1 egg, lightly beaten

Steps:

  • Make beurre blanc: In a small saucepan over medium heat, combine wine, vinegar, shallots, thyme and bay leaf. Boil until liquid has evaporated. Stir in cream, and boil until liquid is reduced by half; decrease heat to low. Whisk in butter, 1 piece at a time, adding each new piece before previous one has melted completely. Do not allow sauce to simmer, or it may separate.
  • Strain sauce through a fine sieve into a heatproof bowl. Stir in chives, lemon juice, salt and pepper. Keep warm by setting bowl in a larger container of hot water.
  • Preheat oven on broiler setting. Pat fillets dry, and season with salt and pepper.
  • Heat oil and 1 tablespoon butter in a large skillet over medium-high heat. Saute halibut fillets for 2 to 3 minutes on each side, or until lightly browned, and just cooked through. Transfer to a baking sheet, and cool 5 minutes. In a small bowl, stir together bread crumbs, almonds and 1 tablespoon melted butter. Brush tops of fillets with egg, and spread with almond mixture.
  • Broil fillets 1 to 2 minutes, or until browned (watch closely - every broiler has its own personality!). Place fillets on individual plates, and spoon beurre blanc around it.

3 lbs halibut steaks
1 tablespoon salt
1/2 teaspoon pepper
3 limes, juice of
2 cloves garlic, crushed
1/4 cup olive oil
1/2 cup sliced almonds
1 tablespoon butter

Steps:

  • Heat oven to 500 degrees F.
  • Arrange fish in a shallow baking pan.
  • Season with salt and pepper.
  • Blend together lime juice, garlic and oil and brush over fish.

  • Saute almonds in butter until golden brown.
  • Serve fish with almonds sprinkled on top and garnished with lime wedges.

Tips:

  • Use fresh halibut: Fresh halibut has a mild, sweet flavor that is perfect for this recipe. If you can't find fresh halibut, you can use frozen halibut that has been thawed in the refrigerator overnight.
  • Make sure the halibut is dry before cooking: Pat the halibut fillets dry with paper towels before coating them in the almond crust. This will help the crust adhere to the fish and prevent it from becoming soggy.
  • Use a light hand when coating the halibut: Don't press the almond crust into the halibut too hard, or it will fall off during cooking. Just lightly coat the fish with the crust.
  • Cook the halibut over medium heat: Cooking the halibut over medium heat will help to prevent the almond crust from burning. Cook the fish for 3-4 minutes per side, or until it is cooked through.
  • Serve the halibut immediately: Almond-crusted halibut is best served immediately after it is cooked. The fish will become less crispy as it sits, so don't let it sit for too long before serving.

The combination of the crispy almond crust and the tender, flaky halibut is sure to please everyone at your table. This recipe is also a great way to get your kids to eat fish. The almond crust makes the fish more appealing to kids, and the mild flavor of the halibut is sure to be a hit.
