ALMOND BUTTER HONEY NUT O'S BARS

Almond Butter Honey Nut O's Bars image

This just came to me in an email from Cascadian Farms and I am posting it here for safekeeping. The recipe is credited to Shaina Olmanson. I found them rather sweet, so I will probably reduce the honey/sugar. Instead of making a drizzle I just added chocolate chips and butterscotch chips into the mixture, which was yummy but again added to the sweetness. Experiment! Let me know what you change to make it work for your family :). Time does not include cooling time.

Tips:

  • Make sure your almond butter is creamy and smooth. If it's too thick, it will be difficult to spread and the bars will be dry.
  • Use high-quality honey. This will give the bars a delicious, natural sweetness.
  • Don't overcook the oats. They should be chewy, not mushy.
  • Press the mixture firmly into the pan. This will help the bars hold together.
  • Chill the bars for at least 2 hours before cutting them. This will make them easier to handle and cut.
  • Store the bars in an airtight container in the refrigerator for up to 2 weeks.
