One 18.3-ounce box brownie mix, such as Duncan Hines
2 large eggs
3/4 cup natural crunchy almond butter
1/4 cup powdered sugar
2 tablespoons coconut oil, melted and cooled slightly

  • Combine the brownie mix with the eggs, oil and 1/4 cup water in a large bowl. Stir together using a rubber spatula until fully incorporated. Spread in the prepared pan.
  • For the topping: Combine the almond butter, powdered sugar and coconut oil in a separate bowl. Spoon dollops of this mixture over the top of the brownie batter. Time 1h20m

Yield 12 brownies

Number Of Ingredients 12

2 tablespoons unsalted butter, at room temperature, plus more for greasing the pan
1/2 cup almond butter
2 large eggs
3/4 cup sugar
1/4 cup prune puree
2 teaspoons vanilla
3/4 cup unsweetened cocoa powder
1/2 cup whole-wheat flour
1/2 teaspoon fine salt
3/4 cup mini chocolate chips
1/4 cup walnuts, chopped
1/2 teaspoon flaky sea salt

Steps:

  • Preheat the oven to 325 degrees F. Grease an 8-by-8-inch pan with butter. Cut a piece of parchment to hang over 2 sides of the pan.
  • Mix together the butter and almond butter by hand in a large mixing bowl. Beat the eggs in a small bowl, then add them to the butter mixture. Mix in the sugar, prune puree and vanilla.
  • Whisk together the cocoa powder, flour and salt in a separate bowl. Gently stir the flour mixture into the wet ingredients. Mix by hand just until combined; do not over-mix. Stir in the chocolate chips and walnuts. Pour the batter into the prepared pan. Sprinkle with the flaky sea salt.
  • Bake until a toothpick inserted in the middle of the brownies comes out clean, about 30 minutes. Remove to a wire rack to cool, and then cut into squares.

Tips:

  • Use a good quality almond butter: This is the star ingredient, so make sure you choose a brand that you like the taste of. Look for almond butter that is made with 100% almonds and no added sugar or salt.
  • Don't overmix the batter: Overmixing can make the brownies tough. Just mix until the ingredients are combined. Too much mixing will result in a dry and dense brownie.
  • Bake the brownies until a toothpick inserted into the center comes out with just a few moist crumbs attached: This will make sure that the brownies are cooked through but still fudgy. If you overcook them, they will be dry and crumbly.
  • Let the brownies cool completely before cutting them: This will help them to set and hold their shape. If you cut them too soon, they will be gooey and difficult to handle.
  • Store the brownies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week: You may also freeze them for up to 2 months.

Conclusion:

These almond butter brownies are a delicious and healthy treat that are perfect for any occasion. They are easy to make and can be customized to your liking. So next time you're looking for a sweet snack, give these almond butter brownies a try!
