1 1/2 cups light cream

2 teaspoons Old Bay seasoning
1 pound crab meat

Steps:

  • Boil pasta according to package directions. Make sure to liberally salt the pasta water once it starts boiling before adding in the pasta.
  • When the pasta is almost done place butter and cream in a saucepan and heat until the butter melts. Remove from heat and stir in the cheese until melted. Add in the Old Bay seasoning and the crab meat and stir to combine. Set aside.

4 tablespoons butter
2 ounces all-purpose flour
4 cups whole milk
Kosher Salt
White pepper
1 cup grated Parmesan
12 ounces lump crabmeat
30 large shrimp (21/25 count), peeled and deveined
Kosher salt and freshly ground black pepper
2 tablespoons grapeseed oil
3 cloves garlic, sliced
3 pounds (cooked weight) cooked fettuccine
1 tablespoon lemon juice
1/4 cup chicken stock
1/2 cup heavy cream
3 large egg yolks
2 tablespoons chopped chives

Steps:

  • For the bechamel sauce: Melt the butter in a saucepan. Whisk in the flour and cook for 2 to 3 minutes, stirring constantly. Slowly whisk in the milk. Simmer for 20 minutes, stirring frequently to avoid burning. Season with salt and white pepper, then strain through a chinois and hold for later use.
  • For the seafood alfredo pasta: Bring a large pot of water to a boil to reheat the cooked pasta. In a saute pan or small saucepan, heat the bechamel sauce to a simmer. Add the Parmesan and stir to melt the cheese. Add the crabmeat and toss to warm.
  • Sprinkle the shrimp with salt and pepper. Heat a large saute pan over high heat. Add the grapeseed oil and then the shrimp to the pan. Cook for 1 to 2 minutes, then flip the shrimp and finish cooking, another 1 to 2 minutes. Remove the shrimp, leaving the oil in the pan. Hold the shrimp for plating.
  • Add the sliced garlic to the shrimp pan and saute until it just begins to brown around the edges. While the garlic is cooking reheat the pasta in the boiling water, about 1 minute. Strain the pasta, add it to the pan with the garlic and toss.
  • Add the bechamel and crab to the pasta and toss. Add the lemon juice, Chicken stock and cream and sprinkle with salt and pepper. Add the egg yolks and toss to incorporate. Cook for 1 minute to help thicken the sauce. Add the shrimp and toss.
  • Divide the pasta and shrimp evenly between serving plates and garnish with chopped chives.

1 1/2 tablespoons flour
1 cup fat-free half-and-half
3 tablespoons parmesan cheese
1/2 teaspoon minced garlic clove
1 dash pepper
6 ounces canned crabmeat, divided 1/2
1/4 cup olive oil
1 tablespoon fresh basil leaf, minced
1 teaspoon fresh lemon juice
1 small garlic clove, minced
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 1/2 lbs mahi mahi fillets, 4/6oz fillets
basil leaves, Julienne cut
3 tablespoons parmesan cheese
crabmeat

Steps:

  • Prepare Alfredo Sauce.
  • Melt butter in sauce pan over medium heat. Gradually whisk in flour. This will create a paste. Gradually add half and half, whisking until incorporated and no lumps are present.
  • Continue to whisk until hot, about 3-5 minute. The longer you cook the base (without the cheese) the thicker the sauce will be.
  • Add parmesan slowly, whisking until incorporated. Add minced garlic, salt and pepper. Cook for 2 minutes or until cheese is melted. Remove from heat, add half the can of crab. Keep warm on very low heat, stirring occasionally so skin doesn't form.
  • Preheat broiler.
  • Cut four 6x8-inch pieces of foil.
  • Place 1 fish fillet in center of each piece of foil. Fold up foil to form rectangle with 3/4-inch-high sides. Place packets on small baking sheet.
  • In small bowl combine olive oil, minced basil leaves, lemon juice minced garlic clove, salt and pepper mixture.
  • Drizzle over fish in foil. Broil fish, Turning fillets when opaque in center, about 6 minutes.
  • Transfer fillets to 4 plates. Spoon alfredo sauce over fillets. Garnish with fresh julienned cut basil leaves, parmesan cheese and remaining crab meat. Serve.
