I found this recipe in a newspaper and adjusted it somewhat by adding additional Parmesan cheese. This is a wonderful side dish, and since the potatoes are cooked with the skin on, they are nutritious as well as delicious.

Time 30m

Yield 2

Number Of Ingredients 5

1 large russet potato, scrubbed
1 tablespoon vegetable oil
1 tablespoon finely grated Parmesan cheese
¼ teaspoon garlic powder
¼ teaspoon Italian seasoning

Steps:

  • Preheat an air fryer to 425 degrees F (220 degrees C) according to manufacturer's instructions. Line the basket with nonstick foil.
  • Pierce the potato several times with a paring knife. Microwave on high power until very soft, 8 to 10 minutes. Turn the potato over after about 4 minutes to ensure even cooking. Remove and let cool enough to handle.
  • Slice potato in half lengthwise; slice each half into 4 wedges, then cut the wedges in half. Drizzle with oil and toss very gently to coat. Place the potatoes close together in the air fryer with the skin sides down. Sprinkle with Parmesan cheese, garlic powder, and Italian seasoning, then move the slices apart. (Starting with them close together helps you get more of the cheese and seasonings on the potatoes.)
  • Air-fry until golden brown, about 20 minutes, checking every 5 minutes. Reduce air fryer temperature to 350 degrees F (175 degrees C). Continue to air-fry until well browned and crispy, about 5 minutes more.

Tips:

  • Choose the right potatoes: For the best results, use Yukon Gold potatoes or another variety that is good for roasting. They should be firm and about the same size so that they cook evenly.
  • Cut the potatoes evenly: Cut the potatoes into evenly sized pieces so that they cook at the same rate. This will help to prevent some pieces from being overcooked while others are still undercooked.
  • Coat the potatoes in oil and seasonings: Before air frying, toss the potatoes in a little bit of oil and your favorite seasonings. This will help them to crisp up and get a nice flavor.
  • Cook the potatoes in a single layer: When you air fry the potatoes, make sure to spread them out in a single layer so that they cook evenly. If you overcrowd the basket, the potatoes will not cook properly.
  • Shake the basket during cooking: During the cooking process, shake the air fryer basket a few times to ensure that the potatoes are cooking evenly. This will help to prevent them from sticking to the basket and burning.
  • Serve immediately: Air-fried Parmesan potatoes are best served immediately after they are cooked. This is when they are at their crispiest and most flavorful.

Conclusion:

Air-fried Parmesan potatoes are a quick and easy side dish that is perfect for any occasion. They are crispy, flavorful, and sure to please everyone at the table. With just a few simple ingredients and a few minutes of cooking time, you can enjoy this delicious dish.
