Yield 4 servings

Number Of Ingredients 16

2 dried mushrooms
1 1/2 cups warm water
1/2 cup leftover chicken and/or pork adobo meat, shredded (or shredded rotisserie chicken)
1 tablespoon red or white wine (optional)
3 tablespoons vegetable oil, divided
4-6 cloves garlic, minced
1 small to medium onion, cut into slivers
1-2 celery ribs, chopped
1 small red bell pepper, seeded and cut into thin strips
1/4 cup fresh shrimp, peeled and deveined, or dried shrimp
1/4 cup soy sauce, plus a dash for serving
1 medium carrot, cut into thin strips
1 chayote or zucchini, cut into thin strips, or 1/2 head broccoli or napa cabbage, chopped
1/2 pound bihon (dry rice noodles) (see Note)
1/2 teaspoon freshly ground black pepper
Dash freshly squeezed calamansi (or lime) juice, for serving (optional)

Steps:

  • Soak the mushrooms in the warm water for at least 20 minutes. Drain the mushrooms, reserve the soaking liquid, and thinly slice the mushrooms. Combine the adobo and wine (if using) in a bowl.
  • Heat 2 tablespoons of the oil in a large skillet or wok over medium heat until it shimmers. Add the garlic and stir-fry until light gold. Add the onion and cook, stirring occasionally, for about 2 minutes, or until translucent. Stir in the celery and bell pepper. Cook, stirring occasionally, for 2 minutes. Add the adobo. If you are using fresh shrimp, add them, too. Cook, stirring, for about 1 minute. Remove from the heat and set aside.
  • Pour the reserved mushroom soaking liquid into a saucepan and add the soy sauce, mushrooms, carrot, and chayote. If you are using dried shrimp, add those, too. Bring the mixture to a boil over high heat. Add the noodles and toss with the rest of the ingredients. As the noodles become tender, separate them until they are able to mix evenly with the veggies, about 3 minutes.
  • When the noodles have completely absorbed the liquid and are chewable, stir in the celery, bell pepper, and adobo mixture. Season with the black pepper and mix thoroughly. Pour in the remaining 1 tablespoon oil. Reduce the heat to low to gently fry the noodles for about 2 minutes. Serve with an extra dash of soy sauce and calamansi juice, if using.

INSTANT POT CHICKEN ADOBO AND RICE

Instant Pot Chicken Adobo and Rice image

Adobo is the national dish of the Philippines. Of course the Instant Pot is not part of the traditional method of preparing adobo but it makes the vinegar-braised recipe so simple. Chicken thighs are transformed into a flavorful one-pot dinner that's sweet, sour, and a tad salty.

Provided by Riley Wofford

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Time 45m

Yield Serves 4

Number Of Ingredients 11

2 tablespoons vegetable oil
8 bone-in, skin-on chicken thighs (about 2 1/2 pounds), patted dry
Kosher salt and freshly ground black pepper
1 bunch scallions (about 7), white and light green parts cut into 1-inch pieces, dark green part thinly sliced for serving
1 head garlic (about 12 cloves), cloves smashed and peeled
2 red Thai chiles, halved lengthwise and seeded for less heat, if desired
1/2 cup reduced-sodium soy sauce
1/2 cup rice wine vinegar
2 teaspoons sugar
2 fresh bay leaves (or 4 dried)
1 cup white rice, rinsed well (until the water runs clear)

Steps:

  • Heat oil in a 6-quart multicooker set to the high "Saute" setting. Season chicken with salt and pepper. Working in two batches, add chicken to pot, skin-side down, and cook until golden brown, 5 to 6 minutes. Transfer to a plate. Remove all but 2 tablespoons fat from pot.
  • Add scallion pieces, garlic, chiles, soy sauce, vinegar, sugar, and bay leaves to pot. Bring to a boil and cook until reduced by half, about 5 minutes. Stir in rice and 1/4 cup water; nestle chicken into rice. Secure lid of multicooker.
  • Switch to "Pressure Cook" setting, adjust pressure to high, and set timer for 8 minutes. Once cycle is complete, allow pressure valve to release naturally. Once all steam has been released, carefully remove lid. Discard bay leaves. A thermometer inserted into thickest part of chicken (near but not touching bones) should register 165 degrees. Serve chicken over rice and top with thinly sliced, green scallions.

Tips:

  • Choose the right rice. Jasmine rice or medium-grain white rice are both good choices for adobo rice.
  • Rinse the rice before cooking. This will remove any excess starch and help the rice cook evenly.
  • Use a large pan. This will give the rice plenty of room to cook and prevent it from sticking together.
  • Add the right amount of water. The general rule of thumb is to use 1 1/2 cups of water for every 1 cup of rice.
  • Bring the water to a boil before adding the rice. This will help the rice cook evenly.
  • Reduce the heat to low and simmer the rice for 18-20 minutes. Do not lift the lid during this time.
  • Once the rice is cooked, remove it from the heat and let it stand for 5 minutes before fluffing it with a fork.
  • Serve the rice hot with your favorite adobo dish.

Conclusion:

Adobo rice is a delicious and versatile side dish that can be served with a variety of main courses. It is a popular dish in many cultures, and there are many different ways to make it. The tips above will help you make the best adobo rice possible. Enjoy!
