Time 25m

Yield 4

Number Of Ingredients 7

2 tablespoons extra virgin olive oil
1 large yellow onion, peeled and sliced into ¼-inch strips
4 bell peppers, stemmed, seeded and cut into ¼-inch strips
½ teaspoon salt
½ teaspoon freshly ground black pepper
2 teaspoons balsamic vinegar
1 teaspoon fresh thyme, finely chopped (or ½ teaspoon dried thyme)

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onions, peppers, salt and pepper.
  • Reduce the heat to medium-low and cook, stirring frequently, until the onions are caramelized and the peppers are tender and slightly browned, 15 to 20 minutes. If a brown coating forms on the bottom of the pan during the cooking process, add a few tablespoons of water and stir; repeat as necessary.
  • Add balsamic vinegar and thyme and turn the heat down to low. Cook for a few more minutes. Taste and adjust seasoning, if necessary. Serve hot or at room temperature.

Tips:

  • Choose the right bell peppers: For a stir-fry, it's best to use bell peppers that are firm and have a deep color. Avoid peppers that are bruised or have soft spots.
  • Slice the bell peppers and onions evenly: This will help them cook evenly. You can use a sharp knife or a mandoline to slice the vegetables.
  • Use a hot wok or skillet: A hot pan will help to sear the vegetables and prevent them from becoming soggy.
  • Don't overcrowd the pan: If you overcrowd the pan, the vegetables won't cook evenly. Cook the vegetables in batches if necessary.
  • Stir-fry the vegetables until they are tender-crisp: You don't want to overcook the vegetables, or they will become mushy. Stir-fry them until they are just tender and still have a bit of a crunch.
  • Season the vegetables with your favorite seasonings: You can use salt, pepper, garlic powder, onion powder, or any other seasonings that you like.
  • Serve the stir-fry over rice, noodles, or your favorite grain: This will make a complete and satisfying meal.

Conclusion:

Bell pepper and onion stir-fry is a quick, easy, and delicious meal that is perfect for a weeknight dinner. It's also a healthy meal that is packed with vitamins and minerals. So next time you're looking for a simple and tasty meal, give this bell pepper and onion stir-fry a try.
