1 cup of your buddies' favorite beer
Maple syrup
1 tablespoon chopped marjoram leaves
1 tablespoon chopped rosemary leaves
1 tablespoon chopped thyme leaves
Garlic salt
Fresh ground pepper
4 eggs
8 pieces bacon
4 croissants
4 slices sharp cheddar
1 cup apple cider vinegar
4 serrano peppers, diced
1/4 onion, diced
4 tomatillos, diced
4 kiwis, diced
Couple sprigs cilantro, leaves chopped

Steps:

  • Combine all ingredients for patties in a large mixing bowl and form into 4 patties.
  • Fire up the grill! Take a swig out of your beer. Put patties on grill. Cook to desired doneness.
  • Prepare 4 eggs over easy in pan on grill. Place bacon on grill.
  • Mix all ingredients for salsa in bowl.
  • Place croissants on grill and put cheese on the patties.

A meal and a half in a bun - and with MORE than a bit of a kick as well! (I should have called this An All Blacks Burger maybe?!)

500 g lean ground beef
1 onion, finely diced
2 garlic cloves, peeled and chopped
1 1/2 teaspoons prepared mustard
2 tablespoons sweet chili sauce
2 teaspoons prepared horseradish (optional)
1 1/2 teaspoons Worcestershire sauce
1 egg
2 cups breadcrumbs
1 teaspoon salt and pepper, to taste
6 hamburger buns, halved and toasted
lettuce
sliced tomatoes
sweet cucumber pickle
75 ml fresh cream, whipped
4 tablespoons sour cream
1 teaspoon Worcestershire sauce
2 teaspoons sweet chutney
salt and pepper
1 dash cayenne pepper (optional) or 1 dash Tabasco sauce (optional)

Steps:

  • Combine all the patty ingredients and form into 6 patties of equal size with wet hands.

1/2 small head green cabbage, cored and finely shredded (about 2 cups)
1/2 small white onion, grated
3 tablespoons apple cider vinegar
2 tablespoons mayonnaise
2 tablespoons olive oil
2 teaspoons sugar
Kosher salt and freshly ground black pepper
1 tablespoon ancho chile powder
2 teaspoons paprika
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon dry mustard powder
1 teaspoon dried oregano
1/2 teaspoon cayenne powder
Kosher salt and freshly ground black pepper
Canola oil, for brushing
1 1/2 pounds ground chuck (80 percent lean)
Kosher salt and freshly ground black pepper
4 brioche buns, split
8 slices white American cheese
1/2 cup store-bought BBQ sauce, such as Spicy Bone-Suckin' Sauce, or homemade

Steps:

  • Heat a gas or charcoal grill to high. Brush the grill grates with oil.
  • For the coleslaw: Combine the carrot, cabbage, onion, vinegar, mayonnaise, oil and sugar in a large bowl. Season with salt and pepper to taste. Let the slaw sit at least 15 minutes before serving.
  • For the spice rub: Whisk together the ancho chile powder, paprika, coriander, cumin, mustard powder, oregano, cayenne and 1 teaspoon each salt and pepper in a small bowl.
  • For the burgers: Divide the meat into 4 equal portions (about 6 ounces each). Shape each portion with your hands into a round patty, about 3/4 inches thick. Use your thumb to make a divot in the center of each burger. Sprinkle both sides of each burger with salt and pepper. Sprinkle the spice rub on one side of the burgers then brush with oil. Grill, spice rub-side down first, covered, until golden brown and slightly charred, about 4 minutes per side for medium.
  • While the burgers cook, toast the buns on the grill until lightly charred, 10 to 15 seconds. Set aside.
  • Add 2 slices of cheese to the tops of each burger. Cover the burgers with the grill lid, large domed lid or large metal bowl and count to 10 until the cheese is melted.
  • Place the burgers on the bottom buns and spoon about 2 tablespoons of the BBQ sauce on each. Top with the sliced pickled jalapenos, some of the coleslaw and the top buns and serve immediately.

1/3 cup sugar
1/4 cup honey
1/4 cup molasses

1 large egg, lightly beaten
1/3 cup quick-cooking oats

Set aside 1 cup barbecue sauce to serve with burgers., In a large bowl, combine the egg, oats, 1/4 cup of the remaining barbecue sauce, onion salt, garlic salt, pepper and salt. Crumble beef over mixture and mix well. Shape into six patties. , Grill, covered, over medium heat for 6-8 minutes on each side or until a thermometer reads 160°, basting with 1/2 cup barbecue sauce during the last 5 minutes. Serve on buns with toppings of your choice and reserved barbecue sauce.
