1 cup unsweetened cocoa powder (natural or Dutch process)

2 cups sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
3 large eggs, at room temperature
3/4 cup vegetable oil
1/2 cup sour cream
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Coat two 9-inch-round cake pans with cooking spray and line the bottoms with parchment paper.

Trim the tops of the cakes with a long serrated knife to make them level, if desired.

3/4 c. quality unsweetened cocoa powder*
1/2 c. 1 stick unsalted butter, room temperature
1 3/4 c. powdered sugar
1/4 c. unsweetened natural (dutch process or cocoa rouge cocoa powder)
1 tbsp. milk
1 tsp. vanilla extract
2 pinches coarse sea salt
1/4 c. chocolate curls (chocolate jimmies or crunchy dark chocolate pearls)
