THE BEST BEAN AND HAM SOUP

The Best Bean and Ham Soup image

I make this hearty soup using the ham bone from our Easter spiral ham. I serve it with corn muffins and fresh fruit. It makes a huge pot of soup, so invite some friends or just freeze several portions for later use. Remember to soak the beans the night before you make the soup.

Tips:

  • Soak the beans overnight or for at least 8 hours before cooking. This will help to soften the beans and reduce the cooking time.
  • If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a variety of beans in your soup. This will give the soup a more complex flavor and texture.
  • Don't be afraid to experiment with different vegetables in your soup. Some good options include carrots, celery, onions, potatoes, and tomatoes.
  • Add a ham bone or smoked ham hock to the soup for extra flavor. If you don't have a ham bone or hock, you can add a teaspoon of smoked paprika to the soup instead.
