Tasty and filling, this is a wonderful 'got everything in the house' recipe!! This recipe is very versatile. I have substituted many different ingredients like yams, corn and even cheese soup. It all comes out yummy!

½ cup uncooked long-grain white rice
3 potatoes, sliced
1 onion, sliced into rings
2 carrots, cut into 1 inch pieces
1 (15 ounce) can green peas, with liquid
1 (10.75 ounce) can condensed tomato soup
1 (10.75 ounce) can water
1 pound pork sausage, sliced and browned
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a lightly greased 9x13 inch baking dish layer the rice, potatoes, onion, carrots, peas, tomato soup with water, and sausage. Salt and pepper to taste.
  • Bake covered at 350 degrees F (175 degrees C) for 45 minutes, or until fork tender. Remove cover for last 5 minutes of baking.

3 potatoes, thinly sliced
3 carrots, thinly sliced
1 large onion, thinly sliced
½ cup uncooked long-grain rice
2 (8 ounce) cans peas, with liquid
1 (10.75 ounce) can condensed tomato soup
1 (10.75 ounce) can water
1 pound pork sausage
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer potatoes, carrots and onions in a large buttered casserole dish. Sprinkle the uncooked rice over the vegetables. Then add the peas (with liquid) and arrange the pork sausage on top of that. Dilute tomato soup with a can of water and pour over the sausage. Season with salt and pepper.
  • Bake covered in a preheated oven for 1 hour, then uncovered for an additional hour.

10 medium sliced potatoes
4 carrots, sliced
4 stalks celery, chopped
1 medium onion, chopped
1/2 cup sliced mushrooms
1 (14 1/2 ounce) can diced stewed tomatoes
1/2 cup cracker crumbs or 1/2 cup panko breadcrumbs
1/2 cup water
8 ounces raw ground beef
salt
fresh ground pepper

Steps:

  • Preheat oven 350°F.
  • Layer potatoes, carrots, onions, mushrooms, celery, tomatoes (drain and save juice) and ground beef in a baking dish.
  • Pour juice and water over mixture.
  • Salt & pepper to taste.

Delicious!!-makes great leftovers. I am a very picky eater and I remember my stepmom serving this to us and we were hesitant to eat it--but once we tried, we all couldn't get enough! I always DOUBLE the recipe and add extra onions. Can use leftovers for stuffed peppers. My fav is use banana peppers instead and top with cheese.

1 cup uncooked long grain rice (NOT minute rice-I use uncle bens)
1 cup whole corn, drained (small can)
1 dash salt and pepper, sprinkle
1 (8 ounce) can tomato sauce
4 ounces water (use 1/2 of the tomato can to measure)
1 cup chopped onion
1/2 cup diced red pepper (optional)
3/4 lb uncooked ground beef
salt and pepper, sprinkle
1 (8 ounce) can tomato sauce
2 ounces water (use tomato sauce can to measure 1/4 of the can)
4 slices bacon

Steps:

  • Add ingredients in order as listed above.
  • Cover and bake at 350 for an hour.
  • Uncover and bake 30 mins longer.
