- In a small saucepan, stir milk, sugar, salt and butter together. Heat over low heat until butter melts and sugar dissolves. Cool until lukewarm. Dissolve yeast in warm water in warmed mixer bowl. Add lukewarm milk mixture and 4 1/2 cups flour to yeast mixture, and using a dough hook, mix on low speed for about 1 minute. With the mixer still going, add remaining flour, 1/2 cup at a time, and mix about 1 1/2 minutes, or until dough starts to clean the sides of the bowl. Knead on low speed for about 2 more minutes, or until dough is smooth and elastic - the dough will still be slightly sticky to the touch. Place dough in a greased bowl, turning it to grease the top. Cover the dough with a clean, dry dish towel, and let it rise in a warm place, free from draft, for about 15 minutes (I let mine rise for about 20-22 minutes). Turn the dough onto a lightly floured surface, and divide into 24 equal pieces. Then divide each piece into thirds and roll into balls. Place 3 mini dough balls into each muffin cup. Cover the muffin pan with the dish towel, and let the dough rise for about 15 minutes. Bake at 425ºF for 12 minutes, or until the rolls are golden brown. Remove from pans immediately, and cool on wire racks. Brush with salted, melted butter. Yum!

These are some of the best dinner rolls I've made! The recipe came from a cookbook that my hometown puts out called High Altitude Country Kitched Vol.1 Oct.1995 thru July 1999. This recipe can give you homemade rolls in just 60 minutes!!! What could be better than freshly baked hot rolls to compliment a dinner?! - Preheat oven to 425 degrees F.
- In a large bowl, thoroughly mix 1 1/2 cups flour, sugar, salt and undissolved dry yeast. Set aside.
- In a saucepan, combine milk, water and margarine or butter.
- Heat over low heat until liquids are very warm (120 to 130 degrees F). (Margarine does not need to melt).
- Gradually add warm milk mixture to the dry ingredients.
- Beat at medium speed for 2 minutes, scraping bowl occasionally. (I use my KitchenAid Mixer).
- Add 1/2 cup flour and beat at high speed for 2 minutes, scraping bowl occasionally.
- Stir in enough additional flour to make a soft dough.
- Turn dough out onto lightly floured board; knead until smooth and elastic, about 5 minutes.
- Place in a greased bowl, turning to grease the top.
- Cover and place the bowl over a pan of water that is about 98 degrees.
- Let rise for 15 minutes.
- Punch dough down and turn out on a lightly floured board.
- Shape into rolls and place them on a well grease pan.
- Cover and let rise in a warm, draft-free place for about 15 minutes or until almost doubled in bulk.
- Bake at 425 degrees F for about 12 minutes.

- Combine milk, water and margarine in a saucepan.

- In a large bowl, combine 2 cups flour, sugar, salt and yeast. In a saucepan, heat the water, milk and butter to 120°-130°. Add to dry ingredients. Beat on medium speed for 2 minutes. Add 1/2 cup flour; beat 2 minutes longer. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Do not let rise. - 2. pour the egg in to processor as it is running. After dough is clinging together and off sides turn off. Cover and let rest for 10 minutes.
