In the heart of the Pacific Ocean, where the Mariana Islands proudly reside, lies the vibrant island of Guam, a place steeped in rich culinary traditions and flavors that captivate the senses. Among Guam's culinary gems, three distinct finadene sauces stand out, each offering a unique symphony of tastes that reflect the island's diverse heritage and bountiful natural resources. These sauces, rooted in ancient Chamorro recipes, have been passed down through generations, evolving into culinary masterpieces that showcase the island's unique identity.

**1. Finadenen Hågon Sondågan (Coconut Milk-based Finadene):**

Indulge in the velvety richness of Finadenen Hågon Sondågan, a coconut milk-based finadene that embodies the essence of Guam's tropical paradise. This versatile sauce forms the foundation of many beloved Chamorro dishes, including the iconic kelaguen, a zesty crab salad that tantalizes the palate with its harmonious blend of coconut milk, lemon, and the subtle heat of peppers.

**2. Finadenen Achoti (Achiote-based Finadene):**

Embark on a culinary journey through time with Finadenen Achoti, a vibrant achiote-based finadene that draws inspiration from Guam's Spanish colonial past. This sauce, imbued with the earthy warmth of achiote seeds, garlic, and tomatoes, adds a distinctive reddish hue and a depth of flavor to traditional dishes like chicken kelaguen and the savory escabeche, a tangy fish stew.

**3. Finadenen Guaiya (Guava-based Finadene):**

FINADENE

I learned to make this on Guam. This is an all purpose sauce and can be used as a marinade, or poured over rice or cooked meat. You can make it as hot or mild as you like. The longer you let it sit the hotter it gets!
