Time 15m

Number Of Ingredients 2

1 pound (raw) fresh sausage links or brats of choice
for serving, as desired: toasted brat buns or brioche buns, grilled peppers & onions, sauerkraut, mustard or Dijonnaise, ketchup, etc.

Steps:

  • Prepare your grill for indirect cooking, creating a zone of direct high heat & a second zone of indirect heat. If using a gas grill, begin preheating at least 15 minutes before grilling. If using charcoal, light the charcoal at least 30 minutes prior to grilling. (To learn more about zone grilling, be sure to check out this post.)
  • Once the grill is hot, place the sausage directly on the indirect heat side of the grill, arranging the sausage as close to the direct heat as possible without being directly over the flame. Close the lid & cook for 4-5 minutes. The heat from the direct heat side of the grill will circulate around the sausage, cooking them with really gentle indirect heat. After 4-5 minutes, flip the sausage, & cook over indirect heat for another 4-5 minutes, or until an instant-read thermometer inserted in the center of the sausage registers a temperature of 150 degrees F.
  • Transfer the sausage to the direct heat. Grill 2-3 minutes per side, until charred as desired & the internal temperature reaches 160 degrees F. Transfer to a plate to rest & cool slightly before serving.
  • the grilled sausage on a toasted bun with all of your favorite toppings. Enjoy!

Time 35m

Number Of Ingredients 9

24 chipolata sausages
100g low-sugar ketchup
100g passata
100ml cider vinegar
100g light brown soft sugar
1 garlic clove , crushed
1 tsp chipotle paste
2 tbsp butter
8 wooden or metal skewers (if using wooden, soak in water for at least 15 mins first)

Steps:

  • To make the sauce, combine the ingredients in a saucepan, then season. Bring to the boil and bubble for 3-4 mins until the sugar has completely dissolved and the sauce is glossy. Leave to cool. The sauce will keep in the fridge for up to two weeks or freeze for up to two months.
  • Heat a barbecue until the coals are glowing white hot. Lay six of the sausages next to each other and push one stick through one end of all the sausages and the other stick through the other ends so the sausages look like a ladder (leave a gap between each sausage). Repeat with the other sausages in batches of six.
  • Barbecue the sausages on each side until they are browned and cooked through, then brush with sauce and cook for a minute on each side until sticky-looking. Brush once more with the sauce before serving, and serve the rest of the sauce on the side.

BACON EXPLOSION

Bacon Explosion image

This concoction and Internet sensation came to The Times from Jason Day and Aaron Chronister, who created it shortly before Christmas one year in Roeland Park, Kan. They modestly call it "the BBQ Sausage Recipe of all Recipes." It contains at least 5,000 calories and 500 grams of fat, but you don't have to eat it all at once. It is not for vegetarians, ascetics or the faint of heart - instead, consider it a delicious challenge to your abilities at the grill.

Time 3h

Yield 10 or more servings

Number Of Ingredients 4

2 pounds thick-cut sliced bacon
1 1/2 pounds Italian sausage, casings removed
3 tablespoons barbecue rub
3/4 cup barbecue sauce

Steps:

  • Using 10 slices of bacon, weave a square lattice like that on top of a pie: first, place 5 bacon slices side by side on a large sheet of aluminum foil, parallel to one another, sides touching. Place another strip of bacon on one end, perpendicular to the other strips. Fold first, third and fifth bacon strips back over this new strip, then place another strip next to it, parallel to it. Unfold first, third and fifth strips; fold back second and fourth strips. Repeat with remaining bacon until all 10 strips are tightly woven.
  • Preheat oven to 225 degrees or light a fire in an outdoor smoker. Place remaining bacon in a frying pan and cook until crisp. As it cooks, sprinkle bacon weave with 1 tablespoon barbecue rub. Evenly spread sausage on top of bacon lattice, pressing to outer edges.
  • Crumble fried bacon into bite-size pieces. Sprinkle on top of sausage. Drizzle with 1/2 cup barbecue sauce and sprinkle with another tablespoon barbecue rub.
  • Very carefully separate front edge of sausage layer from bacon weave and begin rolling sausage away from you. Bacon weave should stay where it was, flat. Press sausage roll to remove any air pockets and pinch together seams and ends.
  • Roll sausage toward you, this time with bacon weave, until it is completely wrapped. Turn it so seam faces down. Roll should be about 2 to 3 inches thick. Sprinkle with remaining barbecue rub.
  • Place roll on a baking sheet in oven or in smoker. Cook until internal temperature reaches 165 degrees on a meat thermometer, about 1 hour for each inch of thickness. When done, glaze roll with more sauce. To serve, slice into 1/4-to- 1/2-inch rounds.

Tips:

  • Choose high-quality sausages: Look for sausages made with fresh, flavorful meat and natural casings. Avoid sausages that are heavily processed or contain excessive fillers.
  • Use a variety of sausages: Experiment with different types of sausages, such as Italian, bratwurst, or chorizo, to add complexity and depth of flavor to your dish.
  • Cook the sausages properly: Sausages should be cooked thoroughly to ensure they are safe to eat. Use a meat thermometer to check that the internal temperature of the sausages has reached 160°F (71°C).
  • Baste the sausages with BBQ sauce: Basting the sausages with BBQ sauce during the cooking process helps to keep them moist and flavorful. Use a brush to apply the sauce evenly to the sausages, and baste them every few minutes.
  • Serve with your favorite sides: BBQ sausages are a versatile dish that can be served with a variety of sides. Popular sides include mashed potatoes, baked beans, coleslaw, and potato salad.

Conclusion:

This recipe for 1-2-3 BBQ Sausages is an easy and delicious way to enjoy this classic summer dish. With just three ingredients and a few simple steps, you can have tender, flavorful sausages that are perfect for any occasion. Whether you are grilling them in the backyard or cooking them in the oven, these sausages are sure to be a hit. So fire up the grill or preheat the oven, and get ready to enjoy some delicious BBQ sausages!
