Time 50m

Number Of Ingredients 15

2 Tablespoons butter
1 small yellow onion (diced)
2 cloves garlic (minced)
¼ teaspoon dried rosemary
¼ teaspoon dried thyme
¼ teaspoon celery salt
¼ teaspoon black pepper
¼ teaspoon kosher salt
1 pinch cayenne (optional)
5 cups zucchini (cut into chunks)
3 cups chicken broth
1 Tablespoon soy sauce ((or Worcestershire sauce))
2 Russet potatoes (equal to 1 pound)
1/2 cup Half and Half (or heavy cream)
1 cup Cheddar Cheese

Steps:

  • Note: There is no need to peel the zucchini for this soup unless yours is jumbo sized, in which case it's possible that the skins are tough and slightly bitter.
  • Shred the cheese from a block for best results. Set aside to allow to come down to room temperature. This will allow it to melt and combine into the soup smoothly.
  • Melt butter in a soup pot over medium heat. Add onions, cook until softened, about 5 minutes. Add garlic and cook 1 more minute.
  • Add diced zucchini and seasonings: (1/4 tsp each of: dried rosemary, thyme, celery salt, kosher salt, pepper, and an optional pinch of cayenne.) Sauté for 5 minutes.
  • Peel and rinse the potatoes. Cut them into small pieces of equal size so that they cook evenly and quickly.
  • Add diced potatoes, chicken broth, and soy sauce. Bring to a boil, then reduce heat to medium. Skim up any brown foam from the top if needed.
  • Let simmer, partially covered, until the vegetables are very fork tender. About 20 minutes.
  • Remove from heat. Use an immersion blender or transfer to a blender in batches to blend until smooth.

ZUCCHINI AND ROSEMARY SOUP

Zucchini and Rosemary Soup image

Categories     Soup/Stew     Herb     Vegetable     Quick & Easy     Rosemary     Zucchini     Summer     Bon Appétit

Yield Serves 8

Number Of Ingredients 11

2 tablespoons (1/4 stick) butter
1 tablespoon vegetable oil
1 large onion, chopped
2 garlic cloves, sliced
2 teaspoons minced fresh rosemary
6 cups chicken stock or canned low-salt broth
1 russet potato, peeled, sliced
3 medium zucchini, thinly sliced
1 zucchini, cut into 1/2-inch cubes
Croutons
Chopped green onions

Steps:

  • Melt butter with oil in heavy large saucepan over medium-high heat. Add onion; sauté until translucent, about 5 minutes. Mix in garlic and rosemary. Add stock and potato; bring to boil. Reduce heat and simmer 10 minutes. Add sliced zucchini; simmer until tender about 15 minutes. Working in batches, puree in blender. Season with salt and pepper.
  • Cook cubed zucchini in saucepan of boiling salted water for 30 seconds. Drain. Rewarm soup over medium heat. Ladle into bowls. Top with zucchini and croutons. Sprinkle with green onions.

Tips:

  • Choose the right zucchini: Look for small to medium-sized zucchini that are firm and have smooth skin. Avoid zucchini that are too large, as they may be tough and seedy.
  • Prep your zucchini properly: Wash the zucchini thoroughly and trim off the ends. Then, cut the zucchini into 1-inch pieces.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality broth. Vegetable broth or chicken broth are both good options.
  • Don't overcook the zucchini: Zucchini cooks quickly, so be careful not to overcook it. Overcooked zucchini will become mushy and lose its flavor.
  • Season the soup to taste: Once the soup is cooked, taste it and season it with salt and pepper to taste.
  • Serve the soup with your favorite toppings: Zucchini soup is delicious served with a variety of toppings, such as croutons, grated Parmesan cheese, or chopped fresh herbs.

Conclusion:

Zucchini soup is a delicious and versatile dish that can be enjoyed for lunch or dinner. It's also a great way to use up leftover zucchini. With its creamy texture and fresh flavor, zucchini soup is sure to be a hit with your family and friends.
