A cross between a cake and a loaf bread, with sweet-tart plums and a brown sugar topping. Just like my mother-in-law used to make. Use plain, lemon, or orange yogurt.

½ teaspoon vanilla extract
2 eggs
1 ½ cups all-purpose flour
½ teaspoon salt
¼ teaspoon baking soda
⅓ cup plain yogurt
¼ cup brown sugar

Tips:

  • For a sweeter bread, use ripe plums. If your plums are tart, you may want to add an extra 1/4 cup of sugar to the batter.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • To make sure your bread is evenly cooked, insert a toothpick into the center of the loaf. If it comes out clean, the bread is done.
  • Zucchini plum bread can be stored at room temperature for up to 3 days. You can also freeze it for up to 2 months. To freeze, wrap the bread tightly in plastic wrap and then place it in a freezer bag.

Conclusion:

Zucchini plum bread is a delicious and easy-to-make bread that is perfect for breakfast, lunch, or a snack. It is also a great way to use up extra zucchini and plums. The bread is moist and flavorful, with a sweet and slightly tart taste. If you are looking for a new bread recipe to try, I highly recommend giving zucchini plum bread a try.
