  • Preheat oven to 350* After grating zucchini, squeeze out as much liquid as possible with hands.

These are very good and easy to throw together, just make sure the pan is heated quite hot before adding as if it is too cool, it makes it harder to handle them and when it comes to flipping they will tend to want to break up. I served these with a corn relish but feel free to have them on their on. I have included the recipe for the relish if you wish to make it.

3/4 cup uncooked brown rice, should make 11/2 cups cooked
2 medium zucchini, coarsely grated
1 onion, finely chopped
2 tablespoons parsley, finely chopped
2 -3 eggs, lightly beaten (I say 2-3 depending on the weight of eggs.)
1 1/2 cups panko breadcrumbs, flakes (Japanese breadcrumbs, you may have to adjust amount if using regular as they are of different textur)
130 g creamed corn
1/4 cup olive oil
250 g sweet corn relish
1 1/4 cups sour cream
2 tablespoons chives, chopped finely
3 drops Tabasco sauce

Steps:

  • Combine rice, zucchini, onion, parsley, egg, panko flakes and corn in a large bowl, stir with a wooden spoon to mix well.
  • Shape into patties (I usually get about 14 patties from this.).
  • Heat oil in a large frying pan, once quite hot, but not smoking, add patties in batches and cook until browned on both sides and heated through. Drain on absorbent paper. I served mine with a dollop of corn relish and cream. Recipe follows.
  • To Serve: Place salad some salad greens on a plate, arrange patties on this and top with relish if desired.
  • Corn Relish and Cream.
  • I think this relish is quite delicious and goes great with the patties, I can't get corn relish where I am so I make my own. I am not sure how using a jar of store bought will adjust the taste, (as this is what I have listed for the recipe.) but I am sure it will still taste great.
  • Combine all ingredients in a bowl. That's it easy peasy, This makes about 2 cups.

1/3 cup balsamic vinegar

  • Preheat oven to 350 degrees.
  • line cookie sheet with parchment paper and spray with nonstick spray.

  • Scoop up in a 1/3 measuring cup mixture and gentle flip onto parchment paper flatten slightly.

  • In large bowl, COMBINE chickpeas (I used canned), breadcrumbs, grated zucchini, finely diced or grated cloves, cumin, cayenne, egg and coriander.

3 cups grated zucchini
1 teaspoon salt
1 egg, beaten
1/4 cup Bisquick (more or less)
1/3 cup parmesan cheese
1/2-1 teaspoon garlic powder
salt and pepper
butter or cooking spray, for frying

Steps:

  • Grate zucchini, no need to peel or seed unless seeds are large; sprinkle zucchini with salt; let set 15 to 20 minutes, then drain WELL.
  • Add the beaten egg, bisquick, Parmesan cheese, garlic powder, salt& pepper to the drained zucchini and mix well, batter will not be stiff or real thick.
  • Using a large skillet heat, add oil enough to fry patties, Drop by tablespoon to make a pattie about 2 to 3 inches in diameter, cook over mediun heat until browned on each side, about 3 to 4 minutes each side.
  • Place patties between paper towels. Keep warm in oven until ready to serve, Enjoy.

1 tablespoons finely chopped fresh thyme
Freshly ground black pepper
Vegetable oil (for frying; about 1 1/2 cups)
Roasted Red Pepper Labneh

Steps:

  • Mix zucchini, onion, and 1 tablespoons salt in a medium bowl. Let sit 10 minutes, then wring out as much liquid as possible from zucchini and onion in a kitchen towel. Mix with leek, egg, panko, cilantro, and thyme in a clean medium bowl; season with pepper.
  • Pour oil into a large skillet, preferably cast iron, to a depth of 1/2" and heat over medium heat until oil bubbles when a pinch of zucchini mixture is added.
  • Working in batches, drop spoonfuls of zucchini mixture into skillet and gently flatten with a spatula into 2" patties. Cook until golden brown, about 3 minutes per side. Drain on paper towels; season with salt. Serve with Roasted Red Pepper Labneh.

2 beaten eggs
1 1/2 c shredded, cheddar cheese or your favorite
1/2 - 3/4 tsp kosher salt

2 - 3 Tbsp chopped sweet onion - i use more
2 Tbsp butter or more as needed
serve with sour cream or favorite sauce
OTHER SPICES I'VE USED IN THE PATTIES ARE CAJUN SEASONING, GARLIC POWDER, CAYENNE PEPPER, HOT PEPPER FLAKES... OR MAKE THEM YOUR OWN

  • 1. In a medium bowl, mix all ingredients together, except for the butter. These are some other seasonings I've used in these patties - garlic powder, onion powder, season salt, Tony Chacheres Cajun seasoning...all were wonderful...I never make them the same way twice...lol!

1 c steamed zucchini

1/2 c whole wheat flour

  • 1. Steam cauliflower in microwave, allow to cool, finely chop. Chop zucchini in food processor, steam in microwave, allow to cool, using tea towel squeeze water out of zucchini. TOFU ZUCCHINI PATTIES

These tasty Tofu Zucchini Patties have been adapted from a recipe I found in The Australian Women's Weekly's 'The Health Cookbook'. When I've made them for friends, as a casual luncheon dish, they've always been popular - including with those more conservative diners who had never previously eaten tofu! I've suggested serving them specifically with Greek yoghurt - as that's what I generally use - but I've also served them with tzatziki. If you're looking for a recipe for tzatziki, it's hard to beat Ravenseyes' Recipe #306901 or Recipe #157176. BTW, Australian brown onions are what Americans call yellow onions. The original recipe specified "1 cup packaged breadcrumbs" which I've left in the posted recipe but when I've made these I have used processed fresh breadcrumbs. If you find it easier, you can also process the onion and garlic. I've made the herbs optional as you may prefer some other herb combinations, and if you like your food spicier, feel free to modify the recipe so that it best meets your taste preferences.

  • Place the zucchini in a dry bowl. Mix in the egg, yolk, 1/2 cup flour, the cheese, and remaining 1/2 teaspoon salt. Mix in the parsley, onions, and dill. If the batter is very wet, add more flour by spoonfuls until it is stiffer.
  • Heat 2 tablespoons olive oil and 2 tablespoons corn oil in a large skillet over medium heat. Working in batches, drop the batter by rounded tablespoonfuls into the skillet. 3 c zucchini, grated
1/3 c parmesan cheese, grated
1 c biscuit mix
1 egg, beaten
1 clove garlic, crushed
1 tsp italian seasoning

2 cups grated zucchini (or various vegetables; carrots, corn, etc)
salt
2 eggs, beaten
1/2 cup chopped onion
1/2 cup all-purpose flour
1/2 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
2 tablespoons vegetable oil

Steps:

  • 1. Spread zucchini. Lay out on paper towels or in a colander (with a bowl under it), sprinkle zucchini with salt and let rest for at least 30 minutes (I get best results when I let it sit for several hours). This step pulls out excess moisture from the zucchini/squash.
  • 2. In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese (add seasoning at this time as well if you desire).
  • 3. Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

Tips:

  • Choose small to medium-sized zucchinis for the best texture and flavor.
  • Shred the zucchini using a box grater or food processor fitted with the shredding blade.
