Number Of Ingredients 6

1/2 cup vegetable oil
1 cup Panko, a Japanese-style breadcrumb and can be found in the Asian section of your local grocery store
1/2 cup Parmesan cheese, grated
2 zucchinis, thinly sliced, 1/4-inch thick rounds
1/2 cup all-purpose flour
2 large eggs, beaten

Steps:

  • Heat vegetable oil in a large skillet over medium high heat. In a large bowl, combine Panko and Parmesan; set aside. Working in batches, dredge zucchini rounds in flour, dip into eggs, then dredge in Panko mixture, pressing to coat. Add zucchini rounds to the skillet, 5 or 6 at a time, and cook until evenly golden and crispy, about 1 minute on each side. Transfer to a paper towel-lined plate. Serve immediately.

Tips:

  • Choose the right zucchini: Select firm, medium-sized zucchini for crispier results.
  • Slice the zucchini thinly: This will help them cook evenly and become crispy.
  • Use a non-stick baking sheet: This will prevent the zucchini from sticking and burning.
  • Don't overcrowd the baking sheet: Make sure to leave some space between the zucchini slices so they can cook evenly.
  • Bake until golden brown: The zucchini should be tender on the inside and crispy on the outside.
  • Serve immediately: Zucchini parmesan crisps are best enjoyed fresh out of the oven.

Conclusion:

Zucchini parmesan crisps are a delicious and healthy snack or appetizer. They are easy to make and can be customized to your liking. With their crispy texture and cheesy flavor, they are sure to be a hit at your next party or gathering.
