Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Time 2h

Number Of Ingredients 8

1/3 cup olive oil, plus more for pan
2 cups all-purpose flour (spooned and leveled), plus more for pan
1/3 cup milk
2 large eggs
1 cup grated Parmesan cheese (about 4 ounces)
2 teaspoons baking powder
Coarse salt and ground pepper
1/2 pound (about 1 medium) zucchini, coarsely grated

Steps:

  • Preheat oven to 375 degrees. Brush a 9-by-5-inch loaf pan (6-cup capacity) with oil; dust with flour, and tap out excess.
  • In a small bowl, whisk oil, milk, and eggs. In a large bowl, whisk flour, Parmesan, baking powder, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper; mix in zucchini, then egg mixture until just moistened (batter will be very thick, like biscuit dough).
  • Transfer batter to prepared pan; press in gently. Bake until a toothpick inserted in center comes out clean, 60 to 70 minutes (tent with foil if loaf starts to brown too quickly). Cool 15 minutes in pan; turn out loaf onto a rack to cool completely.

Tips:

  • Choose the right zucchini. For this recipe, it's best to use small to medium zucchini that are firm and free of blemishes. Avoid using large zucchini, as they tend to be more watery and less flavorful.
  • Slice the zucchini evenly. This will help them cook evenly in the oven. If you have a mandoline, use it to slice the zucchini into thin, even slices. If you don't have a mandoline, use a sharp knife to slice the zucchini as thinly as possible.
  • Don't overcrowd the baking sheet. When you're baking the zucchini slices, make sure to spread them out in a single layer on the baking sheet. If you overcrowd the baking sheet, the zucchini will steam instead of roast and won't get as crispy.
  • Use a good quality marinara sauce. The marinara sauce is one of the key ingredients in this recipe, so it's important to use a good quality sauce. Look for a sauce that is made with fresh tomatoes and herbs. Avoid using a sauce that is made with a lot of sugar or additives.
  • Don't overcook the zucchini. Zucchini is a delicate vegetable, so it's important to not overcook it. Once the zucchini is tender and slightly browned, it's done. If you overcook the zucchini, it will become mushy and lose its flavor.

Conclusion:

Zucchini parm bacon bread is a delicious and easy-to-make dish that is perfect for a quick weeknight meal. The combination of zucchini, bacon, Parmesan cheese, and marinara sauce is sure to please everyone at the table. So next time you're looking for a new and exciting way to cook zucchini, give this recipe a try. You won't be disappointed!
