2/3 cup oat flour (old fashioned oats ground into a flour)
1 egg
1/2 cup shredded, packed zucchini (water squeezed out)
1/2 cup shredded carrots
1/2 cup chopped yellow onion
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon poultry seasoning
1 teaspoon salt
1/2 teaspoon ground sage
1/2 teaspoon cayenne pepper (optional)
1/2 teaspoon pepper
2/3 cup barbecue sauce

Steps:

  • Preheat oven to 350F. In a large mixing bowl, combine all ingredients except barbecue sauce. Use your hands to mix and evenly disperse ingredients, but do not over-mix. If the mixture is too dry, add in a tablespoon of milk at a time until the mixture is moist but still able to hold its shape.

1 green bell pepper, diced
½ cup diced sweet onion
½ teaspoon minced garlic
1 pound extra-lean (95%) ground beef
1 cup whole wheat bread crumbs
2 large eggs
¾ cup shredded carrot
¾ cup shredded zucchini
salt and ground black pepper to taste
¼ cup ketchup, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x5-inch loaf pan with cooking spray.

1 cup breadcrumbs
1/2 cup grated Parmesan

1 tablespoon Worcestershire sauce
2 large eggs, lightly beaten
1 medium onion, grated
1 medium zucchini, grated and squeezed dry
