1 bay leaf, (crumbled)
2 garlic cloves, (minced, or 1/2 tsp garlic powder)

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 13

2 to 3 tablespoons extra-virgin olive oil
8 ounces cremini mushrooms, stemmed and thinly sliced
6 ounces oyster mushrooms, torn into 2-inch pieces
6 ounces shiitake mushrooms, trimmed of woody ends and quartered
2 cloves garlic, finely minced or grated
Kosher salt and freshly ground black pepper
1/4 to 1/2 teaspoon crushed red pepper flakes
One 13.5-ounce can coconut milk, such as Chaokoh
3 cups water
2 tablespoons nutritional yeast

3 medium zucchini, cut into 1-inch dice (about 4 1/2 cups)
1/2 cup packed basil leaves, finely chopped, plus more leaves for garnish

Steps:

  • Heat a 13-inch nonstick skillet over medium heat. Add the oil. Add the mushrooms in batches and cook, stirring occasionally until golden brown before adding more mushrooms, 10 to 12 minutes total. Reduce the heat to medium-low and add the garlic, 1 1/2 teaspoons salt, 1/2 teaspoon black pepper and the crushed red pepper flakes. Stir together.
  • Add the coconut milk, water and nutritional yeast to the skillet. Stir together and taste for seasoning and add more salt or black pepper, if needed. Add the pasta and zucchini and stir, making sure the pasta is submerged in the liquid.
  • Cover with the lid and simmer for 12 minutes, stirring every 3 to 4 minutes. Uncover and add the basil. Stir and simmer uncovered until the sauce has thickened and the pasta is al dente, 5 to 6 minutes.

Tips:

  • Slice the zucchini and mushrooms thinly: This will help them cook evenly and quickly.
  • Don't overcrowd the pan: If you add too much zucchini and mushrooms at once, they will steam instead of sautéing.
  • Cook the zucchini and mushrooms in batches: If you have a lot of zucchini and mushrooms, cook them in batches so that they don't overcrowd the pan.
  • Season the zucchini and mushrooms well: Salt, pepper, garlic powder, and Italian seasoning are all great options.
  • Add the pasta to the zucchini and mushrooms: Once the zucchini and mushrooms are cooked, add the pasta and cook it according to the package directions.
  • Stir in the sauce: Once the pasta is cooked, stir in the sauce. You can use a store-bought sauce or make your own.
  • Garnish with Parmesan cheese: Before serving, garnish the pasta with Parmesan cheese. This will add a delicious flavor and richness.

Conclusion:

This zucchini mushroom and pasta skillet is a delicious and easy meal that is perfect for a quick weeknight dinner. It is packed with flavor and is sure to please everyone at the table. The combination of zucchini, mushrooms, pasta, and sauce is a classic that is always a winner. So next time you are looking for a quick and easy meal, give this zucchini mushroom and pasta skillet a try.
