Yield 8 servings

Number Of Ingredients 5

Peel zucchini, remove centers and cut up as for apple pie to fill three cups. Place in bowl and mix well with:
1 cup sugar
1 teaspoon cinnamon
1 Tablespoon tapioca
1 Tablespoon flour

Steps:

  • Let stand while preparing crust. Add: 1 Tablespoon vinegar 1/4 cup lemon juice 1/4 cup sugar + cinnamon Dot with butter. Cover with top crust and bake 375° for 1 1/2 hour. Might spill over in oven.

Tips:

  • Choose firm zucchini: For best results, select firm and medium-sized zucchini. Overripe or soft zucchini will yield too much moisture, making the pie soggy.
  • Use a food processor: A food processor makes quick work of grating the zucchini. You can also use a box grater, but it will take longer.
  • Don't overmix the crust: Overmixing the crust will make it tough. Mix just until the ingredients come together.
  • Chill the pie crust before baking: Chilling the pie crust before baking helps to prevent it from shrinking and becoming tough.
  • Bake the pie until the filling is bubbly and the crust is golden brown: The pie is done baking when the filling is bubbling and the crust is golden brown. A toothpick inserted into the center of the pie should come out clean.
  • Let the pie cool before serving: Allow the pie to cool for at least 1 hour before slicing and serving. This will help the filling to set and the pie will be easier to slice.

Conclusion:

This zucchini mock apple pie is a delicious and easy-to-make dessert that is perfect for a summer gathering. The zucchini gives the pie a moist and flavorful texture, while the cinnamon and nutmeg add a warm and inviting aroma. Serve this pie with a scoop of vanilla ice cream or whipped cream for a truly indulgent treat.
