Number Of Ingredients 7

3 pounds zucchini
1 1/3 cups plain fine dry bread crumbs
2 large eggs, lightly beaten
1/2 teaspoon dried marjoram
About 1 cup vegetable oil for frying
Accompaniment: sour cream
Equipment: a deep-fat thermometer

Steps:

  • Grate zucchini using medium shredding disk of a food processor. Transfer to a bowl and toss with 2 teaspoons salt. Let stand 30 minutes.
  • Squeeze zucchini in batches in a kitchen towel to remove as much liquid as possible. Transfer zucchini to a large bowl and stir in bread crumbs, eggs, marjoram, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  • Preheat oven to 200°F.
  • Heat 1/3 cup oil in a 12-inch heavy skillet over medium heat until it shimmers. Scoop 2 tablespoon mixture per latke into skillet (6 to 8 per batch). Flatten with a fork to form 2 1/2-to 3-inch pancakes. Fry until golden brown, about 2 minutes per side (adding more oil as necessary). Transfer to a paper-towel-lined baking sheet and keep warm in oven.

Tips:

  • Choose the right zucchini: For the best fritters, use zucchini that is firm and has a deep green color. Avoid zucchini that is soft or has brown spots.
  • Grate the zucchini properly: Use a box grater with large holes to grate the zucchini. This will help to create evenly sized fritters that cook evenly.
  • Squeeze out the excess moisture: After grating the zucchini, use a paper towel or cheesecloth to squeeze out the excess moisture. This will help to prevent the fritters from becoming too mushy.
  • Don't overmix the batter: Overmixing the batter will make the fritters tough. Mix the batter just until the ingredients are combined.
  • Use a large skillet: Use a large skillet to cook the fritters. This will help to prevent them from overcrowding and becoming soggy.
  • Don't overcrowd the skillet: When cooking the fritters, don't overcrowd the skillet. This will help to ensure that they cook evenly.
  • Flip the fritters carefully: When flipping the fritters, use a spatula that is thin and flexible. This will help to prevent the fritters from breaking.
  • Serve the fritters hot: Zucchini fritters are best served hot. Serve them with your favorite dipping sauce.

Conclusion:

Zucchini fritters are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great way to use up leftover zucchini.
