My local gourmet grocery store use to sell single servings of this, but they quit selling it. I was addicted to it, so one of the employees emailed me the recipe so I could do it myself. A great vegetarian dish or side dish.

Categories     Vegetable     Bake     Vegetarian

Yield 6 servings

Number Of Ingredients 17

4 garlic cloves, minced
2 tsp dried oregano
2 eggs
1 c feta cheese, grated
2 c onions, sliced
1/8 tsp black pepper
1/2 tsp dried marjoram
1-1/2 tbsps vegetable oil
6 c zucchini, thinly sliced into rounds
3/4 c bulgur
1 tbsp tamari soy sauce
2 tbsp tomato paste
1/2 tsp dried basil
2 medium tomatoes, thinly sliced
1 c cottage cheese
1/2-1 c fresh parsley, sliced 1 c cheddar cheese, grated
3/4 c boiling water

Steps:

  • Place bulgur in a bowl & pour the boiling water over it. Cover & set aside until it has absorbed the water. Saute the onions & garlic in the oil until onions are translucent. Add the zucchini, dried herbs, & black pepper; saute on low to medium heat until zucchini is tender, but not too soft. In a bowl, lightly beat the eggs. Mix in the feta & cottage cheese. Add the parsley, tomato paste & soy sauce to the bulgur & mix well. Assemble the casserole in a greased 9X9 casserole dish. First layer the bulgur mixture, next the sauteed vegetables, & then the feta mix. Top the casserole with grated cheese & tomato slices. Bake covered at 350 F for 45 mins. If you like the top crusty, uncover for last 15 mins. Remove from oven & wait 5-10 mins before serving.

Tips:

  • Prepare the zucchini beforehand: Shred the zucchini and sprinkle it with salt. Let it sit for 10 minutes, then drain the excess liquid. This will help prevent the casserole from becoming watery.
  • Don't overcook the zucchini: Zucchini cooks quickly, so be careful not to overcook it. Otherwise, it will become mushy and lose its flavor.
  • Use a good quality feta cheese: Feta cheese is a key ingredient in this casserole, so it's important to use a good quality cheese. Look for a feta that is firm and crumbly, with a slightly tangy flavor.
  • Add some herbs or spices: To add some extra flavor to the casserole, try adding some herbs or spices, such as oregano, basil, thyme, or garlic powder.
  • Serve with a side salad: This casserole is a great main course, but it can also be served as a side dish. Consider serving it with a fresh and crisp side salad.

Conclusion:

This zucchini feta casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with flavor and can be customized to your liking. It is also a great way to use up any leftover zucchini you may have. So next time you're looking for a quick and tasty dinner option, give this casserole a try. You won't be disappointed!
