1 onion, chopped
2 eggs, beaten
1 (8.5 ounce) package dry corn muffin mix
½ teaspoon salt
¼ teaspoon ground black pepper
8 ounces Cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.

3 c shredded zucchini(about 3 medium sized)
3 medium eggs
1 c cup of sour cream
1 c grated cheddar cheese
1/2 c chopped onion
1/2 c melted butter
1 1/2 c cornmeal
1/4 tsp salt

Steps:

  • 1. Heat oven to 400°F. Spray 1 1/2-quart gratin or baking dish with nonstick cooking spray. Place zucchini in large strainer set over bowl; let stand 10 minutes. Press or squeeze zucchini to remove excess liquid.
  • 2. In large bowl, whisk eggs until blended. Add sour cream, cheese, onion, butter and salt; stir until combined. Stir in zucchini and cornmeal until blended. Pour into gratin dish.

1 jalapeno pepper, Minced

10 ounces cheddar cheese
1/2 teaspoon baking powder
