1 egg, beaten
2 tablespoons butter, melted
1 cup seasoned bread crumbs

  • In a large bowl, combine zucchini, egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well.

2 1/2 cups zucchini (peeled and grated)
1 cup breadcrumbs (seasoned or plain)
1/4 cup yellow onions or 1/4 cup red onion, minced
1/4 teaspoon salt
1/4 cup all-purpose flour
2 tablespoons butter, melted
1 teaspoon Old Bay Seasoning
fresh ground pepper, to taste
canola oil or olive oil, for frying
cayenne pepper (optional, for a little extra spice)

Steps:

  • Spread grated zucchini on a kitchen towel and roll up. Twist towel to wring out as much liquid as possible. If you fail to do this, your cakes will be too wet.
  • In a large bowl, combine zucchini and butter. Stir in bread crumbs, onion, Old Bay, cayenne pepper, salt, and pepper. Mix thoroughly to combine.
  • Coat your hands in oil, and shape mixture into patties. Coat each patty in flour. In skillet, heat oil over medium-high heat until hot. Fry patties until golden brown on both sides. (About 3-5 min per side).

2 medium zucchinis
1 medium yellow squash
2 tablespoons chopped chives
1 tablespoon chopped fresh dill
1 tablespoon whole-grain mustard
1 clove garlic, minced
1 lemon, zested
1/2 cup all-purpose flour
1 tablespoon cornstarch
1 teaspoon kosher salt
Pinch of freshly ground black pepper
2 large eggs, beaten
1/4 cup olive oil
1 cup Greek yogurt
1 tablespoon chopped fresh dill, plus more for garnish
1 tablespoon chopped fresh parsley
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 lemon, zested

Steps:

  • For the zucchini quinoa cakes: In a small saucepot, bring 1/2 cup water to a boil. Add the quinoa and reduce the heat to a simmer. Cover and cook until all the water is absorbed and the quinoa is cooked, 10 to 12 minutes. Spread onto a baking sheet to cool, about 10 minutes.
  • Meanwhile, grate the zucchini and squash. Transfer to a kitchen towel and squeeze out as much liquid as possible.
  • In a large bowl, mix together the cooled quinoa, grated zucchini and squash, chives, dill, mustard, garlic and lemon zest. Add the flour, cornstarch, salt, pepper and eggs and mix together well.
  • Heat the olive oil in a large cast-iron skillet until hot. Spoon nine 2 tablespoon-size scoops of the batter into the skillet and flatten slightly. Cook until golden on the bottom, 1 1/2 to 2 minutes. Flip and cook for an additional 1 1/2 to 2 minutes on the other side. Remove to a baking sheet. Repeat with the remaining batter.
  • For the herbed yogurt: Mix together the yogurt, dill, parsley, salt, pepper and lemon zest in a medium bowl.
  • Transfer the cakes to a platter, top with a dollop of the herbed yogurt and garnish with a sprig of dill.
  • To make the cakes in advance: Place the cakes on a baking sheet and keep warm in the oven at 170 degrees F for 20 to 30 minutes before serving.

  • 1. PREPARE THE ZUCHINNI Peel the zuchinni and grate it with a hand grater, and place zucchini in a small shallow bowl.

3/4 teaspoon coarse salt, divided
1/2 medium onion
1/2 cup all-purpose flour
1 egg, lightly beaten
2 garlic cloves, minced
1 tablespoon chopped fresh dill, divided
1 teaspoon chopped fresh dill, divided
1/4 teaspoon pepper
2 -4 tablespoons canola oil, divided
1/2 cup sour cream
1 teaspoon lemon juice

  • Shred zucchini in food processor or with large holes of box grater (you should have about 6 cups). Toss with 1/4 teaspoon of the salt in medium bowl; let stand 5 minutes.

2 cups cooked white rice, medium grain
2 zucchini, medium size
2 green onions, thinly sliced
2 eggs, beaten
1 cup soft breadcrumbs
1/3 cup parmesan cheese, finely grated
2 tablespoons pesto sauce
oil
lemon wedge, to serve

Steps:

  • Combine rice, zucchini, onion, eggs, breadcrumbs, parmesan and pesto in a medium bowl. Shape into 12 patties.
  • Heat oil in a medium frying pan over a moderate heat. Cook patties in batches for 2 - 3 minutes each side or until golden brown. Drain on paper towels.
  • Serve with a salad and lemon wedges.

1/4 cup prosciutto, diced
1 tablespoon olive oil
1/2 medium onion, diced
1/2 medium bell pepper, diced
1 tablespoon tomato paste
2 garlic cloves, minced
1 (14 1/2 ounce) can diced cut tomatoes
1 tablespoon balsamic vinegar
1/4-1/2 teaspoon red pepper flakes
2 tablespoons minced fresh basil
coarse salt, to taste
pepper, to taste
2 cups shredded zucchini
1/2 cup grated onion
1/4 cup seasoned bread crumbs (Seasoned Breadcrumb Mix works well.)
1 egg
1/4 teaspoon baking powder
2 tablespoons extra virgin olive oil
coarse salt, to taste
pepper, to taste
fresh parmesan cheese

Steps:

  • In a medium size saucepan, saute the prosciutto in the olive oil until crisp, add in the onion and bell pepper, cook stirring frequently until crisp tender.
  • Stir in the garlic and tomato paste, cook an additional 2 to 3 minutes, add in the tomato juice from the canned tomatoes and stir mixture scraping up browned bits from bottom of pan.
  • Add the tomatoes, vinegar and red pepper flakes cook until most of the liquid has evaporated add in the fresh basil and season with salt and pepper to taste. Keep warm while preparing the zucchini cakes.
  • Using the large side of the box grater, grate the zucchini and onion. Place in the center of a clean kitchen towel, bring up sides and gently squeeze out the moisture.
  • Place in a medium bowl, add the remaining ingredients and combine well with a spatula.
  • Heat oil in a non-stick skillet over medium heat and when hot drop the mixture into the hot pan forming into 4 equal cakes. Cook the bottom until crisp, turn and gently press down on top. Continue to cook until the other side is crisp and browned.
  • Divide the sauce among 2 plates, top with 2 cakes per each and using a vegetable peeler garnish all with strips of fresh Parmesan cheese.
