1 tablespoon vanilla extract
3 cups grated zucchini
3 cups all-purpose flour
3 tablespoons unsweetened cocoa powder

¼ teaspoon baking powder
½ cup chopped walnuts
½ cup chocolate chips

Steps:

1/2 cup vegetable oil
1/2 cup plus 1 tablespoon sugar, divided
2 large eggs
1/2 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 375°. In a large bowl, beat oil and 1/2 cup sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt; gradually beat into oil mixture. Stir in chocolate chips. One 8-ounce zucchini (about 1 large), grated (about 1 1/2 cups)
1 1/2 cups all-purpose flour (see Cook's Note)
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
3/4 cup semisweet chocolate chips
Canola nonstick cooking spray, for greasing the pan

Steps:

  • Adjust rack to the middle position and preheat the oven to 325 degrees F.
