¾ cup vegetable oil
⅔ cup packed brown sugar
1 cup white sugar
1 cup grated zucchini
2 bananas, mashed
2 teaspoons vanilla extract
3 ½ cups all-purpose flour

1 ½ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
½ cup dried cranberries
½ cup chopped walnuts

1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 teaspoon salt
4 large eggs, room temperature
2 medium ripe bananas, mashed (about 1 cup)
2 cups sugar
1 cup vegetable oil
1-1/2 cups shredded unpeeled zucchini
1 cup chopped pecans

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flour, baking powder, baking soda, cinnamon and salt. In another bowl, whisk eggs, bananas, sugar and oil. 2 high-omega eggs
3/4 cup sugar
1 teaspoon vanilla extract
1/2 cup canola oil or 1/2 cup olive oil
1 1/2-2 cups zucchini, peeled and grated
3/4 cup whole wheat flour
1/2 cup oat bran
1/2 cup ground flax seeds (I used blueberry ground flax from Trader Joe's)
3/4 cup pecan chips
1/2 cup raisins
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Prepare loaf pan or muffin tins with cooking spray.
