4 garlic cloves, peeled and halved
1/2 cup olive oil
1 bunch broccoli, trimmed and ends of stalks removed
salt and pepper
1 lb ziti pasta, cooked and drained

  • Place garlic in heavy skillet; pour in enough oil to cover garlic.
  • Cook over med heat until garlic begins to brown.

2 pounds mussel, beards and barnacles removed, washed and drained well
1 bay leaf
4 cloves
1 bunch broccoli, about 3/4 pound
3/4 pound Salt
3/4 pound ziti
4 tablespoons olive oil
1 tablespoon finely chopped garlic
2 cups canned crushed tomatoes
3 tablespoons tomato paste
1 tablespoon chopped fresh oregano or 1 teaspoon dried
1 small jalapeno pepper, chopped,
Freshly ground pepper to taste
2 tablespoons butter

Steps:

  • Place the mussels in a saucepan with the bay leaf and cloves. Cover tightly and cook over high heat, shaking the pan occasionally, about 3 minutes or until all the mussels are opened.
  • Remove the mussels with a slotted spoon and set aside to cool. Reserve the broth from the mussels, and strain. When the mussels are cool enough to handle, remove the meat and discard the shells.

1 cup chicken stock
1/2 cup grated Parmigiano cheese

  • Grill or broil the sausage in advance. When cooled, slice it thin and set aside. Wash and drain the broccoli di rape and set it aside. In a large pot, put 10 quarts water on to boil, with 3 tablespoons coarse salt added, and immediately start preparing the sauce. Add the ziti to the pot when the water boils and cook until al dente. In a large, deep, heavy skillet with a fitted lid, heat the olive oil, add the garlic, and saute, uncovered, until golden, about 2 minutes. 2 pounds mussels, scrubbed well and beards removed

  • Bring a large pot of salted water to a boil. Pulse the bread, garlic and parsley in a food processor to form moist, green crumbs.
