  • Bring a large pot of lightly salted water to a boil. Cook ziti in boiling water until cooked through but firm to the bite, about 13 minutes; drain. Rinse ziti with cold water until cool; drain.
  • Preheat oven to 375 degrees F (190 degrees C).

  • Cook pasta according to package directions. Drain pasta; set aside. 1 (32 ounce) jar spaghetti sauce
1/2 lb mozzarella cheese, grated (or more)

2 1/2 cups uncooked ziti pasta
3 tablespoons oil
1 lb Italian sausage (casings removed, can use more!)
1/4 cup butter
1 small onion, finely chopped
2 tablespoons fresh minced garlic (or to taste)
1 pinch cayenne pepper (or to taste) (optional)
1/4 cup flour
seasoning salt or white salt
black pepper
2 cups half-and-half
1/3 cup parmesan cheese
1 (1 lb) carton cream-style cottage cheese
1/4 cup parmesan cheese
1 large egg
1 tablespoon chopped fresh parsley
salt and pepper
1/4 lb mozzarella cheese, grated
paprika

Steps:

  • Set oven to 350 degrees.
  • Grease a 3-quart baking dish.
  • Cook the pasta in a large pot of boiling water until JUST tender (do not over-cook the pasta as it will cook more in the oven!).
  • Place the cooked pasta in a large bowl.
  • Heat oil; add in the sausage meat and cook until browned, remove to a plate.
  • For the white sauce; melt butter in a medium saucepan; add the onion, garlic and cayenne pepper if using) saute for about 3-4 minutes.
  • Add in flour and whisk for 1 minute.
  • Slowly add in half and half cream; bring to a simmer, whisking constantly until thickened.
  • Remove from heat; add in 1/3 cup Parmesan cheese, then season with seasoned salt (or white salt) and pepper to taste.
  • Pour the cheese sauce over the cooked pasta in the bowl; mix with a wooden spoon.
  • In a medium bowl mix together the cottage cheese with 1/4 cup Parmesan cheese, egg and chopped parsley, then season with salt and lots of pepper.
  • Spoon HALF of the creamed ziti mixture into the prepared baking dish, then spread the cottage cheese mixture on top, then spoon the remaining pasta mixture on top of the cottage cheese mixture.
  • Sprinkle the cooked sausage meat on the top.
  • Top with mozzarella cheese, then sprinkle paprika on top.
  • Bake uncovered for about 30-35 minutes or until bubbly and hot.
  • Let stand about 5 or more minutes before serving.

4 cups tomato sauce
1 large egg

1/2 pound bulk sweet Italian sausage
1 medium onion, chopped
2 cloves garlic, minced
1 can (28 ounces) crushed tomatoes

1 teaspoon dried leaf basil
1/2 teaspoon dried leaf oregano
1/4 to 1/2 teaspoon crushed red pepper
salt and pepper, to taste
8 ounces ziti pasta
1 cup ricotta cheese, whole milk
3/4 cup fresh grated Parmesan cheese, divided
1 large egg
3 cups shredded mozzarella cheese, divided
1 to 2 tablespoons fresh chopped parsley

  • Heat the oven to 350° F (180° C/Gas 4). Lightly grease or spray a 2 1/2 to 3-quart baking dish with nonstick cooking spray. Heat the olive oil in a large skillet over medium heat. 1 teaspoon olive oil, for boiling
1 tablespoon olive oil, for frying
1 onion, sliced
4 garlic cloves, minced
1/2 lb ground beef
1/2 lb sweet Italian sausage
2 (26 ounce) jars spaghetti sauce
1 (6 ounce) package provolone cheese, sliced
3/4 cup sour cream
1 (15 ounce) container ricotta cheese
1 pinch kosher salt
1 pinch fresh ground pepper
4 green onion tops, diced
4 ounces mozzarella cheese, shredded
2 tablespoons freshly grated parmesan cheese

Steps:

  • Grease a large deep casserole dish or lasagna pan. Bring a large pot of water to a boil, adding 1 t kosher salt and 1 t olive oil. Add pasta and cook 8 minutes. Pasta should still be firm. Drain.

  • Bake at 350 degrees for 25 - 35 minutes, or until cheeses have melted. (If you have it layered in a smaller, deep casserole dish, it will take longer to cook than if you have it layered in a more shallow larger lasagna pan.).

  • 1. Cook pasta. Mince the Garlic, brown sausage and ground. Drain. Put sausage and ground in bowl and cover with spaghetti sauce. In small bowl, combine the egg, ricotta and ¼ cup Parmesan cheese.
  • 2. Spread 1 cup of spaghetti sauce in 13x9 baking dish. Top with a third of pasta, half the ricotta mixture, 2/3's of mozzarella cheese, 1 tbsp of parm and 1 cup of sauce. Repeat layers. Mix with spoon. Final layer is sauce.

1 large eggplant, cut crosswise into 1/3-inch thick rounds
1/2 cup olive oil, plus more as needed
Salt
Freshly ground black pepper
1 cup chopped yellow onion
1 pound Italian sausage, removed from casings
2 tablespoons tomato paste
1 (28-ounce) can whole Italian tomatoes, crushed, and their juices
1 teaspoon Italian seasonings
1/2 cup pitted black olives, coarsely chopped
1/4 teaspoon crushed red pepper
1/4 cup minced fresh basil leaves
4 tablespoons butter
4 tablespoons flour
2 cups whole milk
1/8 teaspoon freshly grated nutmeg
1/2 cup grated Parmesan
8 ounces ziti, cooked according to package directions and drained
1 cup grated mozzarella

Steps:

  • Preheat the oven to 375 degrees F. Lightly grease a 9 by 13-inch casserole dish and set aside. In a large skillet over medium-high heat, heat 1/4 cup of the oil. Add the eggplant in batches, seasoning on both sides with salt and pepper, and cook until golden, adding more oil as needed. Transfer to a plate as they cook, and set aside. Heat 2 tablespoons of the remaining olive oil in a large skillet over medium-high heat. When hot but not smoking, add the onion and sausage, and cook, stirring, until the sausage is browned and the onion is soft, about 6 minutes. Add the tomato paste and cook, stirring frequently, until it begins to brown, about 1 to 2 minutes. Add the tomatoes, their juices, the Italian seasoning, black olives, 1 teaspoon of salt, and the crushed red pepper. Reduce the heat to medium-low and gently simmer, uncovered, until the flavors marry and the sauce slightly thickens, about 20 minutes. Remove from the heat. Add the basil and adjust seasoning, to taste. Meanwhile, melt the butter in a medium saucepan over medium-high heat. Stir in the flour and cook, stirring constantly, until thickened and forms a light roux, about 2 minutes. Whisk in the milk and, whisking frequently, cook until the sauce is thickened and smooth, about 4 minutes. Remove from the heat and season with the nutmeg and salt and pepper, to taste. Arrange half of the eggplant slices on the bottom of the casserole, overlapping as necessary. Top with half of the cooked pasta, then half of the sausage-tomato sauce. Place another layer of eggplant slices on top of the sauce, then layers of pasta and sausage-tomato sauce. Pour on the white sauce, then top with the grated mozzarella and Parmesan. Bake for 1 hour, or until puffed and golden brown on top.

1 egg
1 cup shredded mozzarella cheese (4 oz)
Chopped fresh basil leaves, if desired

Steps:

  • Heat oven to 375°F. Cook and drain pasta as directed on package. Meanwhile, in 12-inch skillet, cook sausage over medium-high heat, stirring occasionally, until no longer pink; drain. Add cooking sauce, 1/4 teaspoon pepper and the cooked pasta; stir well. In small bowl, mix ricotta cheese, Parmesan cheese and egg. Spoon pasta mixture into ungreased 11x7-inch (2-quart) glass baking dish. Spoon ricotta cheese mixture on top; sprinkle with mozzarella cheese. Spray sheet of foil with cooking spray; cover baking dish with foil, sprayed side down. Bake 25 to 30 minutes, removing foil last 10 minutes of bake time, until cheese melts and mixture is hot and bubbly. Sprinkle with basil.

1 small onion
1 garlic clove, minced

2 tablespoons dry red wine or beef broth, optional
1/2 teaspoon Italian seasoning
Salt and pepper to taste
1/2 cup shredded mozzarella cheese

Steps:

  • Cook pasta according to package directions; drain. Crumble sausage into a skillet; add onion and garlic. Cook over medium heat until meat is no longer pink; drain. Combine the sausage mixture, pasta, spaghetti sauce, wine or broth if desired and seasonings., Transfer to a greased 1-qt. baking dish; top with cheese. Bake, uncovered, at 350° for 10-15 minutes or until heated through and cheese is melted.

1/2 lb lean ground chuck
1/2 lb ground turkey
vegetable cooking spray
1 c chopped onion
1 c sliced mushrooms
3/4 c chopped green bell pepper
2 cloves minced fresh garlic
1 c water
1/4 c chopped parsley
1 1/2 tsp italian seasoning
1/2 tsp salt
1/2 tsp pepper
2 can(s) whole tomatoes, undrained and chopped
1 can(s) tomato paste
3 c cooked ziti
1 c fresh grated parmesan cheese

Steps:

  • 1. Cook ground chuck and turkey in a dutch oven over medium heat until browned, stirring to crumble.
  • 2. Drain and pat dry with paper towels; set aside.
  • 3. Coat pan with cooking spray; add onion, mushroom, bell pepper and garlic; saute 4 minutes until tender.
  • 4. Return turkey mixture to pan, add water and next 6 ingredients.
  • 5. Bring to boil; reduce heat and simmer, uncovered, 25 minutes, stirring occasionally.
  • 6. Remove from heat and cool slightly. Add pasta; stir well.
  • 7. Spoon into 13"x9"x2" baking dish, cover with heavy aluminum foil; cut 3 slashes in foil.
  • 8. Bake at 375 degrees for 50 minutes or until thoroughly heated.
  • 9. Uncover; top with cheese. Cover and let stand 5 minutes. Makes 8 servings.
