2 tablespoons oil, divided
1 1/2 lbs medium shrimp, shelled and deveined (leave tail on)
2 green onions, chopped,with tops reserved
2 cloves fresh garlic, peeled and chopped
1 tablespoon chopped fresh ginger or 1/2 teaspoon ground ginger
3/4 cup chicken broth
3 tablespoons tomato paste
2 tablespoons cider vinegar
1 teaspoon sugar
1/2 teaspoon cayenne pepper (or to taste)
8 lettuce leaves (to garnish)

Steps:

  • In a heavy 10-inch skillet heat 1 tablespoon of the oil over moderately high heat for 1 minute.

Kosher salt and black pepper
2 tablespoons extra-virgin olive oil
1 pint cherry or grape tomatoes
2 cups fresh or frozen corn kernels (from 4 ears)
5 garlic cloves, minced
1/2 teaspoon red-pepper flakes
1/4 cup dry white wine
2 tablespoons fresh lemon juice (from 1 lemon), plus wedges for serving (optional)
5 tablespoons unsalted butter, cut into 5 pieces
