I used a food steamer for years and my daughter talked my daughter-in-law and me into going to a Taste of Home show and the demonstrater made these an easier way. This doesn't heat up the kitchen in the summer,...

5 or 6 medium red potatoes, washed and cubed, peel if you want to
1 medium onion, sliced
minced garlic, to taste
2 Tbsp extra virgin olive oil (evoo)
butter
large zip lock steamer bag (they come in a smaller size if you don't want to cook this amount)
1 cup monterrey jack shredded cheese (cheddar is good, too)
1/2 cup shredded mozzarella cheese
1 - 2 Tbsp parsley
salt and pepper, seasoning salt, garlic salt
toppings:
butter, more cheese, oscar meyer real bacon pieces, sour cream, chopped green onions or whatever toppings you prefer

Steps:

  • 1. Put EVOO into steamer bag. Add salt, pepper, parsley and seasonings. Close bag and mash bottom of bag to dissolve and distribute seasonings into oil, add a bit more oil if you need to. Add potatoes, onion, garlic and about a tablespoon of butter. Seal bag and cook on high in microwave for 7 minutes. Carefully shake bag, cook 7 more minutes. Shake again and continue to cook for 5 more minutes. (The instructions say to cook 14 minutes, but I add an additional 5 minutes.) Open bag (careful, it's steamy) and pour potatoes into serving bowl, add cheeses and butter, carefully - so as not to mash potatoes - mix to melt cheeses and butter into potatoes. Top with bacon pieces, sour cream or your choice of toppings. NOTE: When you can find a smoked cheese, that's really good, too, it gives the potatoes a really good smoky flavor, I have cut up smoked sausage and cooked in bag with potatoes, yumm. If I'm cooking corn, broccoli, etc. for that particular meal, I'll re-use the same bag and steam that, too.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place potatoes in an 8x8 inch baking dish.
  • In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.

1 red bell pepper, seeded, finely chopped
1 tablespoon butter
1 1/2 teaspoons garlic powder

  • Seal bag and shake gently to further combine ingredients and distribute butter evenly.

  • Peel potatoes if desired.
