Categories     main-dish

Time 2h10m

Yield 8 servings

Number Of Ingredients 11

1 (5 to 6 pound) roasting chicken
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme, plus 20 sprigs
1 lemon, halved
1 head garlic, cut in half crosswise
2 tablespoons (1/4 stick) butter, melted
1 large yellow onion, thickly sliced
4 carrots cut into 2-inch chunks
1 bulb of fennel, tops removed, and cut into wedges
Olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
  • Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

SHEET-PAN CHICKEN WITH SWEET POTATOES AND FENNEL

Sheet-Pan Chicken With Sweet Potatoes and Fennel image

This easy, sheet-pan dinner sings thanks to its zingy vinaigrette of sharp pecorino, warming cracked pepper and bright lemon - which you'll want to slather on everything. These flavors really get a chance to shine drizzled on top of roast chicken and seasonal vegetables. Don't be afraid to substitute the sweet potatoes and fennel with whatever vegetables you have on hand. Serve the dish with a handful of leafy greens and a generous amount of the vinaigrette.

ROAST CHICKEN

Roast Chicken image

With an ingredient list just four items long (chicken, olive oil, salt, pepper), the genius of this bare-bones roast chicken is in its technique. To make it, thoroughly preheat a cast-iron skillet before sliding into it a seasoned bird, breast side up. In under an hour you'll get a stunner of a chicken, with moist, tender white meat, crisp, salty chicken skin, and juicy dark meat all done to a turn. If you don't already have a cast-iron skillet large enough to hold a whole chicken, this recipe is a good enough reason to invest in one.

Time 1h

Yield 4 servings

Number Of Ingredients 3

1 whole chicken, 3 to 4 pounds, trimmed of excess fat
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

  • Put a cast-iron skillet on a low rack in the oven and heat the oven to 500 degrees. Rub the chicken all over with the oil and sprinkle it generously with salt and pepper.
  • When the oven and skillet are hot, carefully put the chicken in the skillet, breast side up. Roast for 15 minutes, then turn the oven temperature down to 350 degrees. Continue to roast until the bird is golden brown and an instant-read thermometer inserted into the meaty part of the thigh reads 155 to 165 degrees.

POPCORN-FRIED CHICKEN

Popcorn-fried chicken image

Crispy-coated chicken with a special salted popcorn crumb. Serve your breaded goujons with a zingy soured cream dip - perfect for movie night

Provided by Cassie Best

Categories     Dinner, Main course

Time 45m

Number Of Ingredients 10

25g salted popcorn
85g stale bread or breadcrumb
1 tsp smoked paprika
50g plain flour
1 large egg
2 skinless chicken breasts , cut into long thin strips
oil , for frying
150ml pot soured cream
zest 1 lime and juice of ½
handful coriander , chopped

Steps:

  • Put the popcorn, bread or breadcrumbs and paprika in a food processor and blend until finely chopped. Tip into a wide, shallow bowl. Whisk the egg in a second bowl, and mix the flour with some seasoning in a third bowl.
  • Dip the chicken strips first into the seasoned flour, then into the egg mixture, and finally into the popcorn breadcrumbs - press the crumbs onto the chicken to help them stick. Continue until all the chicken pieces are coated, then chill for 30 mins, or up to 1 day. Mix together the ingredients for the dip in a small bowl.
  • When ready to cook the chicken, heat enough oil to just cover the surface of a large frying pan. Once hot, cook the chicken pieces for 2-3 mins on each side (in batches so you don't overcrowd the pan) until golden and cooked through. Drain on kitchen paper. Serve warm with the dip on the side.

Tips:

  • To ensure your chicken is cooked evenly, use a meat thermometer to check that the internal temperature has reached at least 165°F (74°C) in the thickest part of the thigh.
  • For a crispier skin, pat the chicken dry with paper towels before roasting.
  • To prevent the chicken from drying out, baste it with the pan juices every 20-30 minutes.
  • For a more flavorful chicken, use a flavorful marinade or rub. Some popular options include olive oil, lemon juice, garlic, herbs, and spices.
  • If you want to add vegetables to your roast chicken, toss them with olive oil, salt, and pepper, and then place them around the chicken in the roasting pan.
  • For a more elegant presentation, you can truss the chicken before roasting. This will help to keep the chicken's shape and make it easier to carve.

Conclusion:

Roast chicken is a versatile and delicious dish that can be enjoyed for lunch or dinner. It is also a great way to use up leftover chicken. With a little planning and preparation, you can easily make a roast chicken that is both flavorful and juicy. So next time you are looking for a simple and satisfying meal, give roast chicken a try. You won't be disappointed!
