SPICY EGGPLANT & POTATO STEW

Spicy Eggplant & Potato Stew image

This Spicy Eggplant & Potato Stew is a spicy Indian-style eggplant dish that is easy to make and really tasty. I often boil potatoes to keep in the fridge to use for roasting or sautéing, but I particularly love using them to make a quick curry like this one. I craved spicy foods while on chemo. I found they were the only thing that could beat my chemo palate. This tasty treat is great as a side to change up the flavors of a traditional roast chicken or a piece of grilled fish.

Number Of Ingredients 1

3 Asian eggplants halved and cut into ½ inch chunks 6 small potatoes, boiled, quartered and peeled 1 small beefsteak tomato (about 6-ounces), diced 2 cloves garlic, peeled and sliced 1 poblano pepper or 2 jalapenos, deseeded and diced (see Ann's Tips) 1 tablespoon olive oil 1 teaspoon cumin seeds ¼ teaspoon turmeric ¼ teaspoon powdered ginger ¼ lemon 2 teaspoons chopped mint (optional) Sea salt and black pepper, to taste

Steps:

  • Heat the oil in a heavy skillet over a medium-high heat. Add the cumin seeds. When they start to darken and give off their distinct aroma, add the eggplant and garlic. Sprinkle with salt. Sauté until the garlic starts to color.
  • Add the potatoes and peppers. Sauté until the potato and eggplant are golden, the eggplant soft, and the peppers are browned in spots, about 10 minutes. Add the turmeric and ginger, a grind or two of black pepper and cook for one minute.
  • Add the tomatoes, and squeeze the ¼ lemon over the pan. Cook until the tomatoes give off their juices but still have some shape. You can add a couple tablespoons of water or stock to accelerate this. Stir in the mint. Serve immediately with Basic Roast Chicken or baked fish.

30-Minute Spicy Pork and Sweet Potato Stew image

Spicy, smoky chipotle chiles and chili powder add long-cooked flavor to this quick pork stew. To save time and use less fat, only the pork is browned in oil, while the onions get pureed with tomatoes, garlic and the chile to make the broth.

Provided by Food Network Kitchen

Time 30m

Yield 4 servings

Number Of Ingredients 17

1 cup canned unsalted diced tomatoes
1 medium white onion, quartered
2 cloves garlic
1/2 chipotle in adobo sauce, plus 1 tablespoon of the sauce
2 tablespoons vegetable oil
1 large pork tenderloin, trimmed and cut into 1-inch chunks (about 1 1/2 pounds)
Kosher salt and freshly ground black pepper
1 tablespoon chili powder
One 8-ounce sweet potato, peeled and cut into 1/2-inch chunks
2 cups low-sodium chicken broth
1 tablespoon pickled jalapenos
1 cup 2 percent Greek yogurt
1/4 medium head red cabbage
1 medium Haas avocado
1 lime
1/2 cup loosely packed fresh cilantro
Eight 6-inch corn tortillas, warmed

Steps:

  • Puree the tomatoes, onions, garlic, chipotle and adobo sauce in a food processor until completely smooth.
  • Heat the oil in a large Dutch oven or pot over medium-high heat until nearly smoking. Add the pork in a single layer, season with 1 teaspoon salt and 1/2 teaspoon pepper and cook, undisturbed, until beginning to brown, about 2 minutes. Turn the pieces and cook until brown, about 1 minute more. Dust the meat with the chili powder, and add the tomato puree, sweet potatoes, chicken broth, 1/4 teaspoon salt and a few grinds of pepper. Bring to a boil, reduce the heat to medium, cover and gently simmer until the meat is cooked through and the potatoes are tender, about 15 minutes.
  • Meanwhile, prepare the toppings: Chop the jalapenos, and whisk together with the yogurt in a small bowl. Shred the cabbage, cut the avocado into chunks and cut the lime into wedges.
  • Ladle the stew into large, deep bowls. Top with the yogurt mixture, garnish with the cabbage, avocado, lime and cilantro and serve with the tortillas.

  • Use a variety of potatoes: This will give your stew a more complex flavor and texture. Good options include Yukon Gold, red potatoes, and russet potatoes.
  • Don't be afraid to add other vegetables: Carrots, celery, onions, and peas are all great additions to pantry potato stew. You can also add leafy greens, such as spinach or kale, at the end of the cooking time.
  • Use a flavorful broth: Chicken broth or vegetable broth are both good options. You can also use water, but the stew will be less flavorful.
  • Season the stew well: Salt, pepper, and garlic powder are all essential seasonings for pantry potato stew. You can also add other herbs and spices, such as paprika, cumin, or chili powder.
  • Simmer the stew until the potatoes are tender: This will usually take about 20 minutes. Once the potatoes are tender, you can serve the stew immediately or let it cool and store it in the refrigerator for later.
