Time 2h10m

Yield 12

Number Of Ingredients 10

7 cups milk
1 vanilla bean
1 ½ cups Arborio rice
1 cup white sugar
3 strips lemon peel
5 eggs, separated
1 (1.5 fluid ounce) jigger orange liqueur
¼ cup raisins
1 orange, zested
1 tablespoon confectioners' sugar, or to taste

Steps:

  • Bring milk to a simmer in a saucepan; add vanilla bean and stir. Mix rice and white sugar into simmering milk; add lemon peel. Bring liquid to a boil, reduce heat to low, and simmer, stirring constantly, until rice is tender, 20 to 25 minutes. Transfer saucepan to the refrigerator and chill, at least 30 minutes.
  • Whisk egg yolks and orange liqueur together in a bowl. Beat egg whites in a separate bowl until foamy. Continue to beat egg whites until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks.
  • Preheat oven to 350 degrees F (175 degrees C). Grease or line a 9-inch cake pan with parchment paper.
  • Remove vanilla bean and lemon peel from rice. Stir raisins and orange zest into rice; add egg yolk mixture and stir. Softly fold egg whites into rice mixture. Slowly pour rice mixture into the prepared cake pan.
  • Bake in the preheated oven until set, about 1 hour. Sprinkle confectioners' sugar over rice cake.

ZESTY ORANGE CAKE

Zesty Orange Cake image

We were baking basic butter cake in school and one of the girls in my group was eating an orange. The aroma of freshly baked cake and fresh tangy orange gave me the idea to create this recipe. It turned out good!!! I took a slice to school and my teacher said I did a good job!

Time 1h5m

Number Of Ingredients 16

3 c sifted all-purpose flou
1 Tbsp baking powder
1/2 tsp salt
1 c unsalted butter
1 c granulated white sugar
1/2 c brown sugar
4 large eggs
1 1/2 tsp lemon extract
1/2 c butter milk
1/2 c orange juice, fresh
3 Tbsp orange zest
ORANGE GLAZE
1 1/2 c powdered sugar
1/4 c buttermilk
1/4 c orange juice, fresh
1/4 tsp orange gel color

Steps:

  • 1. Pre-heat oven to 350 degrees. Grease and lime a 9" round pan.
  • 2. Mix sifted flour, baking powder, and sift 3x. Set aside.
  • 3. In a large bowl, cream butter on low speed.
  • 4. Add mixed white and brown sugar and 2 tbsp at a time. Scrape sides of bowl occasionally.
  • 5. Add eggs, 1 at a time
  • 6. Mix buttermilk, orange juice and lemon extract to make the liquid ingredients.
  • 7. Into the batter in the bowl, add the dry ingredients alternately with the liquid ingredients; dividing the dry ingredients into 3 parts and the liquid ingredients into 2 parts. Start and end with dry ingredients.
  • 8. Pour batter into prepared pan and bake in the middle rack of the oven for 40 to 50 minutes.
  • 9. ORANGE GLAZE: Put ingredients in a small saucepan and let boil; stirring all the time until a thick liquid consistency is achieved. Pour over cake and decorate as desired.

Tips:

  • Picking the Right Oranges: Choose oranges with a deep orange color and a firm feel for the best flavor and juice content.
  • Zesting the Oranges: Use a fine grater or a microplane to zest the oranges, being careful to avoid the white pith underneath the zest, which can impart a bitter flavor.
  • Measuring the Orange Juice: If you don't have a citrus juicer, you can extract the juice by rolling the oranges on a hard surface to soften them and then cutting them in half and squeezing them by hand.
  • Preparing the Cake Batter: Make sure the butter and eggs are at room temperature before starting, as this will help the ingredients emulsify and create a smooth batter. Don't overmix the batter, as this can result in a tough, dense cake.
  • Baking the Cake: Bake the cake in a preheated oven and keep a close eye on it during baking. Insert a toothpick into the center of the cake; if it comes out clean, the cake is done. Overbaking can dry out the cake.
  • Making the Orange Glaze: While the cake is cooling, make the orange glaze by combining orange juice, sugar, and cornstarch in a saucepan. Bring the mixture to a simmer over medium heat, stirring constantly, until it thickens and becomes glossy.

Conclusion:

The Zesty Orange Cake is a delightful treat that offers a perfect balance of sweet and tangy flavors. With its moist and tender crumb, vibrant orange glaze, and refreshing citrus aroma, this cake is sure to be a hit at any gathering.
