1 1/2 lbs bulk Italian sausage
8 ounces fresh mushrooms, sliced
2 tablespoons butter
1 garlic clove, minced
3 large swiss chard leaves, rolled and sliced thin
1 cup mild cheddar cheese, grated
14 large eggs
1 3/4 cups milk
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 350 degrees.
  • Brown sausage in sauce pan and drain.
  • Spread evenly over bottom of 9 x 13 baking dish.
  • Sauté mushrooms and garlic in butter until almost all liquid is absorbed (you can add a few dashes of white wine at this stage if you prefer.
  • Spread mushrooms over sausage.
  • Layer swiss chard and cheese over mushrooms.
  • In bowl beat the eggs, milk and Dijon mustard and pour evenly over all.
  • Place in oven on middle rack, bake uncovered for 1 hour, (or until middle is firm to touch).
  • Remove from the oven, cover loosely with foil, and let stand 15-18 minutes. Divide and cut into serving sizes.

2 tablespoons olive oil
4 Italian sausages, cooked diced
3 potatoes, diced
1 medium onion, sliced
1/2 red bell pepper, chopped
1 cup baby spinach leaves, lightly chopped
1 tomatoes, diced
8 whole eggs
1/2 cup skim milk
1/3 cup grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon Mrs. Dash garlic and herb seasoning
salt and pepper

Steps:

  • Preheat broiler.
  • Heat cast iron skillet with 1 tbsp oil on stove.
  • Add onion, pepper, sauté over medium heat 4 minutes.
  • Meanwhile beat eggs, milk, seasonings in bowl or large measuring cup.
  • Add potatoes to pan salt and pepper to taste, sauté another 6 minutes.
  • Add sausage to pan, sauté another minute.
  • Turn down heat to medium low, add other tbsp oil, pour in egg mixture, sprinkle spinach on top.
  • Cover and cook 10 minutes.
  • Remove lid, with rubber spatula, loosen egg from sides of pan.
  • Sprinkle tomato, cheese on top.
  • Place under broiler about 6-8 inches from heat, broil 3-5 minutes, until slightly brown and bubbly.
  • Cut into wedges.

1 lb roll Jimmy Dean maple sausage (or sausage of your choice)
1/2 small vidalia onion, chopped (about 1/2 cup)
1 can(s) diced green chilies, 3 oz.
6 large eggs
1/4 c shredded sharp cheddar cheese
3/4 c shredded quesadilla blend cheese
salt and pepper, to taste

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. In an ovenproof skillet (I used my medium sized cast iron skillet) cook and chop the breakfast sausage until browned and in small pieces. *** NOTE: Jimmy Dean sausage is very lean and has almost no fat that cooks out. If using a different brand or type of sausage, you may need to drain excess fat, at this point. ***
  • 3. Add the diced onion and cook for a couple minutes more, until onions are translucent. Add the green chilies and stir to combine; remove from the heat and level out the meat mixture.
  • 4. In a large bowl, crack the 6 eggs; add salt and pepper to taste. Whisk until well blended. Add the cheddar and 1/4 cup of the quesadilla blend cheese; stir to combine. *** NOTE: I personally did not add any salt, as the cheese and sausage have plenty, but did add a generous amount of fresh ground pepper. ***
  • 5. Pour the egg and cheese mixture over the sausage mixture and cook in the preheated oven for about 15-20 minutes or until the eggs are set.
  • 6. In the last few minutes of cooking, sprinkle the remaining 1/2 cup quesadilla blend cheese on top to melt. Remove from oven, slice in wedges and serve immediately.

1 ½ teaspoons dried basil, divided
12 ounces ricotta cheese
1 ½ teaspoons Italian seasoning, divided
1 dash salt and pepper
1 pound mozzarella cheese, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

3/4 pound hot Italian sausage, loose or in links
2 tablespoons extra-virgin olive oil
1 medium onion, diced
Salt and black pepper
3 cloves garlic, minced
2 teaspoons roughly chopped rosemary
1 1/2 cups ricotta
3 ounces grated provolone (about 1 1/4 cup)
3 ounces grated Parmesan (about 3/4 cup)
4 ounces grated smoked mozzarella (about 1 1/2 cup)
10 eggs, lightly beaten and seasoned with salt and pepper
