Steps:
- Position an oven rack in the lowest position; preheat to 350 degrees F. Trim off any skin from the ham, leaving a 1/4-inch layer of fat. Score the fat with a sharp knife in a 1-inch crosshatch pattern without cutting through to the meat. Place the ham flat-side down in a roasting pan and add the chicken broth to the pan. Cover with foil and bake 1 1/2 hours.
- Meanwhile, make the glaze: Whisk the honey, brown sugar, mustards, vinegar, hot sauce, thyme and red pepper flakes in a medium bowl. Remove 3/4 cup of the glaze to a separate bowl and set aside for serving. Remove the ham from the oven, discard the foil and brush with about one-quarter of the remaining glaze. Continue baking, brushing with the glaze and the pan juices every 30 minutes, until the ham is a deep reddish-brown and a thermometer inserted into the center registers 140 degrees F, 1 to 1 1/2 more hours. (Add 1/2 cup water to the pan if the juices dry out.)
- Transfer the ham to a cutting board and let rest 20 minutes before slicing. Serve with the reserved glaze.
DOREEN'S HAM SLICES ON THE GRILL
This is a longtime favorite of my family -- even the most selective 'diners' like it! Cooked ham is basted with a warm, zesty sauce while grilling. Smoked turkey slices may be substituted for ham.

Tips:
- Choose the right type of ham: Use a fully cooked ham for this recipe, as it will cook quickly and evenly on the grill. Look for a ham that is at least 5 pounds so that you have plenty of leftovers.
- Score the ham: Scoring the ham helps the glaze penetrate the meat and creates a crispy crust. Use a sharp knife to make shallow cuts in the ham, about 1 inch apart.
- Use a flavorful glaze: The glaze is what gives the ham its zesty flavor. Use a combination of brown sugar, orange juice, pineapple juice, and Dijon mustard. You can also add other spices, such as ginger, garlic, or cloves.
- Grill the ham over indirect heat: This will help the ham cook evenly without burning. If you are using a gas grill, turn off one of the burners and place the ham on the other side. If you are using a charcoal grill, push the coals to one side and place the ham on the other side.
- Baste the ham frequently: Basting the ham with the glaze will help it stay moist and flavorful. Use a pastry brush to apply the glaze to the ham every 15 minutes or so.
- Let the ham rest before carving: Once the ham is cooked, let it rest for 15 minutes before carving. This will help the juices redistribute throughout the meat.
Conclusion:
Zesty grilled ham is a delicious and easy-to-make dish that is perfect for a summer cookout. The ham is cooked over indirect heat, which helps it cook evenly without burning. The glaze gives the ham a zesty and flavorful crust. This dish is sure to be a hit with your family and friends.
