ZEKE BABIN'S BLACK POT COURTBOUILLON

Zeke Babin's Black Pot Courtbouillon image

Chef John Folse made this on the local news channel here in Baton Rouge, LA and he said that he got the recipe from Zeke Babin of St. Amant who got it from Ms. Sims Leader of White Hall. He described it as a unique version of fish courtbouillon. We really love this dish and so has everyone that's tried it in my extended family.

Time 2h25m

Yield 8-10 serving(s)

Number Of Ingredients 16

12 (5 -7 ounce) catfish fillets
24 shrimp, peeled and deveined (21 count)
1/4 lb butter
2 1/2 cups diced onions
2 cups diced celery
1 cup diced red bell pepper
2 (10 ounce) cans rotel
1/4 cup minced garlic
1 1/2 tablespoons salt
1 1/2 tablespoons black pepper
2 tablespoons granulated garlic
2 tablespoons paprika
6 tablespoons oil-less brown roux
1 cup sliced green onion
1/4 cup minced parsley
1/2 cup hot water

Steps:

  • In a heavy bottomed 12" sauté pan, melt butter over medium-high heat. Add onions, celery, bell pepper and garlic. Sauté 3 to 5 minutes or until vegetables are wilted. Add rotel and cook an additional 3-5 minutes. Remove from heat and set aside.
  • In a 6-quart black iron pot, place 1/3 of sautéed vegetables. Top with four fillets of catfish and eight shrimp. Sprinkle with one third of the salt, pepper, granulated garlic, paprika and flour or roux. Add one third of green onions and parsley. Continue layering and seasoning until all are used up. The top layer of catfish should have a good covering of green onions and parsley.
  • Carefully pour in 1/2 cup hot water to add moisture to bottom.
  • Place pot on low heat and cover tightly. Cook for one hour. Do not uncover during this process. The steaming inside the pot allows the natural juices from the fish to incorporate into the seasonings.
  • After one hour, remove lid and using a rubber spatula, gently separate ingredients from sides of pot, DO NOT STIR! This ensures even liquid distribution in pot. Re-cover and cook one additional hour. The courtbouillon should have a slightly rusty color due to the paprika and the consistency of the liquid should be stew-like. Season to taste with salt and pepper and serve over rice or pasta.
  • Note: The oil-less brown roux is available at your local grocery or may substitute all purpose flour.

BEEF & BEAN BURRITOS

Beef & Bean Burritos image

Years ago I lived in Baton Rouge, La and frequented a restaurant called La Fonda's. They had a unique burrito that I loved. I have tried to recreate it with this recipe and it is very close. A difference is, I think, that they deep fried the tortilla shell where mine is baked.

Time 45m

Yield 8 serving(s)

Number Of Ingredients 17

3 tablespoons olive oil
1 lb ground beef
1/4 cup dried onion flakes
2 tablespoons granulated garlic or 4 garlic cloves
1 teaspoon cumin powder
1 teaspoon red pepper flakes
1 tablespoon white pepper
1 teaspoon salt
1/2 teaspoon fresh ground black pepper or 1 teaspoon ground black pepper
1 (8 ounce) package taco seasoning
1 (16 ounce) can refried beans
1 (16 ounce) can chili beans
1/4 cup water
8 large tortillas
1 cup monterey jack cheese
2 links chorizo sausage (optional)
1 tablespoon dried chipotle powder (optional)

Steps:

  • Brown beef (and chorizo if desired)in olive oil. Add the onions, garlic, cumin, white pepper, red pepper flakes, black pepper, and salt. Add chipotle powder if used. When the beef (and chorizo if used)has browned, add thee taco seasoning and water and stir in well. Now add the refried beans and chili beans and mix in well. Do not drain the chili beans. (Additional water may be used if the mixture is too dry). Simmer for 10 minutes to allow the beans to heat and the flavors to blend.
  • Soften tortillas with steam, hot oil, or warm water. Coat 8 large ramekins or a muffin pan with large cups with cooking spray (Pam). Shape the tortillas into cups in the ramekins or muffin pan. If water was used to soften tortillas, lightly coat them with oil.
  • Place the shaped tortillas in an oven pre-heated to 400 deg. F. Bake for 7 to 10 minutes until tortillas are browned.
  • Remove shaped tortillas from oven and fill with the hot beef/bean mixture. Top each with shredded cheese. Return to oven for 3 to 5 minutes to melt the cheese. Cool for about 3 minutes then remove them from the ramekins or muffin pan. Place them on serving dishes and enjoy.
  • This dish has a moderate zing so the faint of heart may not enjoy it.
  • Makes 8 hearty servings.
  • May be served with Pico de Gallo or a lettuce & tomato salad or Spanish rice.
  • Also, these could be topped with a zesty red or green salsa if desired.

COURT BOUILLON

Court Bouillon image

Categories     Leek     Simmer

Yield makes 6 quarts

Number Of Ingredients 10

1 bunch fresh thyme
1 bunch fresh flat-leaf parsley
1/2 teaspoon whole black peppercorns
1/2 teaspoon whole fennel seeds
1 750-ml bottle dry white wine
1 leek, white and pale-green parts, sliced into 1/4-inch rounds, well washed
2 medium carrots, sliced into 1/4-inch rounds
1 lemon, sliced into 1/4-inch rounds
3 dried bay leaves
2 tablespoons coarse salt

Steps:

  • Fit a 10-quart fish poacher with a rack in the bottom, and place the poacher over 2 burners on top of the stove (or use a large stockpot). Fill with 7 quarts water (about three-quarters full). Tie the thyme, parsley, peppercorns, and fennel seeds together in a small piece of cheesecloth to make a bouquet garni, and place in the poacher; add the wine, leek, carrots, lemon, bay leaves, and salt. Cover, and bring to a simmer. Uncover; gently simmer for 30 minutes. Discard the bouquet garni. Let the bouillon cool to room temperature, about 1 hour. The bouillon can be refrigerated for up to 1 week or frozen for up to 3 months.

Tips:

  • Choose the freshest seafood possible. This will ensure that your courtbouillon is as flavorful as possible.
  • Use a variety of seafood. This will add depth and complexity to the flavor of your courtbouillon.
  • Don't overcrowd the pot. If you add too much seafood, it will not cook evenly and the courtbouillon will be less flavorful.
  • Simmer the courtbouillon gently. This will help to extract the flavors from the seafood and vegetables.
  • Serve the courtbouillon immediately. This is when it is at its best flavor.

Conclusion:

Courtbouillon is a delicious and versatile seafood dish that can be enjoyed by people of all ages. It is a great way to use up leftover seafood, and it can also be made with fresh seafood.
