1 1/2 pounds baby red potatoes

2 tablespoons ghee
2 tablespoons extra-virgin olive oil

Steps:

  • Make the herb sauce, if desired: In a food processor, combine cilantro, mint, pine nuts, and lime juice and zest. Process until finely chopped. With machine running, pour oil in a steady stream through the feed tube; process until smooth. Season with salt.

1 Tablespoon kosher salt, plus additional, to taste
ground black pepper, to taste
¼ cup olive oil
3-4 Tablespoons za'atar

Steps:

  • Preheat oven to 425. Line a baking sheet with parchment paper and set aside.
  • Place the potatoes in a large pot and add cold water to cover. Bring to a boil over high heat and stir in one Tablespoon salt.
  • Cover the pot, then reduce heat to medium and cook until the potatoes are fork tender, about 10 minutes, depending on size.
