Tips:

  • Choose the right zucchini: Look for medium-sized zucchini that are firm and have a deep green color. Avoid zucchini that are too large, as they may be tough and watery.
  • Grate the zucchini: Use a box grater to grate the zucchini. Be sure to grate the zucchini on the large holes, as this will help prevent the fritters from becoming too mushy.
  • Drain the zucchini: After grating the zucchini, place it in a colander and sprinkle it with salt. Let the zucchini sit for 10 minutes, then drain it well. This will help remove excess moisture from the zucchini and prevent the fritters from becoming soggy.
  • Use a light touch: When mixing the batter, be sure to use a light touch. Overmixing the batter will result in tough fritters.
  • Cook the fritters over medium heat: Cook the fritters over medium heat so that they have a chance to cook through without burning.
  • Serve the fritters hot: Zucchini fritters are best served hot. Serve them with your favorite dipping sauce, such as ranch dressing or marinara sauce.
