YUMMY TAMALE PIE
I found this recipe in a cook book by Sandra Lee from the Food Network. I made a dish of this and it was almost instantly inhaled by my DH and DS. Very yummy! At times I have topped this with a dollop of sour cream and fresh cilantro.

Steps:
- preheat oven to 350.
- brown the meat breaking up all large crumbles.
- drain the fat from the meat.
- add the rotel and the salsa verde and stir well making sure everything is mixed.
- in a small bowl mix the cornbread mix and the cream corn just until moist and mixed.
- spoon the meat mixture into a 1 1/2 quart baking dish.
- top with the cornbread mixture, spreading it evenly over the meat.
- sprinkle the top with sliced black olives.
- bake for 40-50 minutes.
- during the last five minutes of cooking add the shredded cheese, and return to oven until cheese is melted.

I found a recipe for chicken tamale pie on Pinterest and tweaked it for my own caloric needs and tastes...it turned out AWESOME!!!

Steps:
- 1. Mix cornbread mix, milk, egg, 1/2 T taco seasoning, cayenne and green chilis. Pour into non-stick sprayed deep dish pie plate and bake 20 minutes at 400 degrees.
- 2. While cornbread mixture is in oven, place browned ground beef, onion, green pepper and jalapeno in skillet (with a lid). Add garlic powder, chili powder, salt and pepper. Bring to medium heat then add chicken stock, stir and cover to lightly steam peppers and onions. Remove from heat.
- 3. Once cornbread mixture is done baking, remove from oven, poke top of crust all over with a fork.
- 4. Spread enchilada sauce over crust.
- 5. Spread meat mixture on top of enchilada sauce.
- 6. Top with shredded cheese and bake at 375 degrees for 15 minutes.
- 7. Remove from oven and let sit 5 minutes.
- 8. Serve with light sour cream and cilantro

- To make the tamale pie more flavorful, use a variety of chili peppers, such as ancho, guajillo, and chipotle peppers.
- If you don't have masa harina, you can use cornmeal instead. However, the texture of the tamale pie will be slightly different.
