Crunchy and full of flavor, this is a perfect recipe for a cookie exchange. It makes a multitude of cookies that all will enjoy. A cookie to enjoy with coffee - they're perfect for dunking!

Time 35m

Number Of Ingredients 10

1 1/2 c melted butter
2 c sugar
1/2 c dark molasses
2 large eggs, beaten
4 tsp baking soda
1 tsp salt
1 Tbsp ground cinnamon
1 tsp nutmeg
4 c all purpose flour
1/2 c sanding sugar (raw sugar)

Steps:

  • 1. Melt the butter in a microwave safe bowl. Mix in the sugar and the molasses. Let it cool on the counter. Mix the eggs in a cup. Wait for the butter mixture to cool so it won't cook the eggs.
  • 2. Add the eggs and and stir in well. Then add in the spices, salt, soda.
  • 3. Add the flour in 1 cup increments, mixing well after each addition. The dough will be stiff at this point. Cover the dough with plastic wrap and refrigerate at least 2 hours. Overnight is better.
  • 4. Preheat oven to 350*F. Rack in the center of oven. I use a walnut sized scoop (2 Tbs.) and drop into sanding sugar, roll around and put 12 cookies per greased cookie sheet. I use parchment paper. Bake 10-12 min. The cookies will flatten out by themselves as they bake. Move to cooling rack to cool completely.
  • 5. The cookies freeze well also. Wrap in foil and place in a freeze bag. They'll be fine for 3 months or so. If you freeze the balls don't roll in sugar until you are ready to bake.

CRACKLE-TOP MOLASSES COOKIES

Crackle-Top Molasses Cookies image

Found this in an old cookie cook book that I bought at a used book sale. They are very delicious and quite easy to make. ENJOY!!

Provided by Janet W

Categories     Drop Cookies

Time 22m

Yield 45 2inch cookies

Number Of Ingredients 9

2/3 cup vegetable oil
1 cup sugar
1 large egg
1/4 cup molasses
2 -2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/3 cup sugar, about

Steps:

  • Preheat oven to 350°.
  • In a large bowl, combine oil and 1 cup sugar.
  • Add egg, beating well.
  • Stir in molasses, 2 cups flour, baking soda, cinnamon and ginger.
  • If necessary, add a little more flour to make a firm dough.
  • Shape dough into 1 1/4 inch balls.
  • Roll in 1/3 cup of sugar.
  • Place 3-inces apart on ungreased baking sheets.
  • Bake 12 minutes or until golden brown and tops crack.
  • Cool on racks.

Tips:

  • For the perfect molasses crackle, use a candy thermometer to ensure the sugar syrup reaches the correct temperature (300°F or 150°C). Overcooking or undercooking the syrup will result in a different texture.
  • Line your baking sheets with parchment paper to prevent the crackles from sticking. Parchment paper also makes it easier to remove the crackles from the baking sheets once they have cooled.
  • Work quickly when pouring the sugar syrup onto the baking sheets. The syrup will start to set quickly, so you need to spread it out thinly before it hardens.
  • Once the crackles have cooled completely, break them into pieces and store them in an airtight container at room temperature. They will keep for up to 2 weeks.

Conclusion:

Molasses crackles are a delicious and easy-to-make candy that is perfect for any occasion. With a few simple ingredients and a little bit of time, you can create a sweet treat that everyone will love.
