GRANDMA'S MEATLOAF WITH OATS

Grandma's Meatloaf with Oats image

Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

Categories     Meatloaf

Time 1h10m

Yield 1 loaf, 4-6 serving(s)

Number Of Ingredients 10

1 lb lean ground beef
1 small onion
1/4 cup green pepper
1/4 cup ketchup
1 tablespoon brown sugar
1 cup instant oats
1 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
1 tablespoon ketchup (for glaze)
1 teaspoon red pepper flakes

Steps:

  • Put the onion and the green pepper in the food processor until finely ground.
  • Mix all the ingredients (except for 1 tbsp ketchup) together and make a loaf.
  • Put the loaf in a loaf pan and glaze with remaining 1 tbsp of ketchup.
  • Put loaf in the oven at 350 degrees for 1 hour (do not preheat the oven).
  • Enjoy!

Tips:

  • Choose the right oats. Quick-cooking or old-fashioned oats can be used in this recipe, but steel-cut oats will not work well.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough.
  • Use a loaf pan that is at least 9x5 inches. A smaller pan will not be able to accommodate all of the meatloaf mixture.
  • Bake the meatloaf at 350 degrees Fahrenheit for 1 hour and 15 minutes, or until a meat thermometer inserted into the center reads 160 degrees Fahrenheit.
  • Let the meatloaf rest for 10 minutes before slicing and serving. This will help the meatloaf to stay moist and juicy.

Conclusion:

This meatloaf recipe is a delicious and easy-to-make dish that is perfect for a weeknight meal. The oats add a nice texture and flavor to the meatloaf, and the ketchup glaze gives it a sweet and tangy flavor. Serve this meatloaf with mashed potatoes, green beans, or your favorite side dishes.
