YUMMY GOOF BALLS

These were sweet, fluffy, flaky and oh so good. They smelled like donuts while cooking! Everyone kept asking "what are you cooking?" We tried baking these too, but preferred them fried (fried always wins!). They would be great for a bake sale, after-school snack and would look pretty on a holiday dessert table. If you want to...

RUM BALLS

Rum Balls image

I wanted a good rum ball with a lot of kick, so I sat down and came up with this recipe. I didn't realize how good these were until one year I didn't make them for work. I just about got lynched! Needless to say, I've made them every year since (about 20 years). These are best if you use Meyers Original Dark Rum® chilled, and Nabisco® 'Nilla wafer cookies. They are at their peak if you make them 2 days in advance. Remove from fridge 30 minutes before serving.

Time 1h10m

Yield 24

Number Of Ingredients 5

1 (12 ounce) box vanilla wafer cookies (such as Nilla®)
1 cup semisweet chocolate chips
¼ cup light corn syrup
¾ cup dark rum (such as Meyer's®)
1 cup confectioners' sugar, plus more for dusting

Steps:

  • Place vanilla cookies in a food processor and process into fine crumbs.
  • Heat chocolate chips and corn syrup together in a saucepan over low heat. Cook, stirring often, until chocolate is melted and smooth, about 5 minutes. Remove from heat and stir in rum and confectioners' sugar until smooth. Fold in cookie crumbs; dough will be sticky.
  • Place saucepan in the refrigerator until dough is firm and easy to roll, about 15 minutes. Cover 2 plates with waxed paper; dust with confectioners' sugar.
  • Roll dough into 1-inch balls and place on the prepared plates. Dust rum balls with confectioners' sugar. Refrigerate until firm, about 30 minutes.
  • Remove rum balls from refrigerator and transfer to a resealable bag, including the extra confectioners' sugar. Seal the bag and shake to coat the rum balls completely with confectioners' sugar.

GOOF BALLS

Goof Balls image

As a dialysis nurse I enjoyed many treats brought to the center for the staff to share. This was one of them. Takes some time but well worth the effort. A helper and an assembly line will help. I make these every year for Christmas and they don't last long. You can't believe how good they are.

Categories     Candies

Time 1h25m

Number Of Ingredients 5

1 lb caramels
1 can(s) eagle brand sweetened condensed milk
2 stick butter
1 box rice krispies
1 pkg regular size marshmallows

Steps:

  • 1. In the top of a double boiler melt and keep warm the first three ingredients. Using a fork or pick, dip and swirl marshmallow to coat then roll in rice krispies. I crush the cereal. Put on wax paper to set. Makes 75-85 delicious treats.

Tips:

  • Ensure all ingredients, particularly the cream cheese, are softened before mixing to achieve a smooth and creamy filling.
  • Chill the dough for at least 30 minutes before shaping the balls. This will prevent the dough from becoming too sticky and difficult to handle.
  • Keep the chocolate chips in the freezer until ready to use. This will help prevent them from melting prematurely.
  • For a more intense chocolate flavor, use semi-sweet or dark chocolate chips.
  • If you want a sweeter treat, add an extra 1/2 cup of powdered sugar to the filling.
  • Serve the goof balls chilled for a firmer texture, or at room temperature for a softer texture.

Conclusion:

These yummy goof balls are a delightful treat that are perfect for any occasion. They're easy to make and always a hit with kids and adults alike. With their creamy filling and chocolatey coating, these little balls of goodness are sure to put a smile on your face. So next time you're looking for a sweet and satisfying snack, give these yummy goof balls a try. You won't be disappointed!
